{Katie’s Kitchen} Bacon & Pineapple Jalapeno Poppers

These are the perfect appetizer to eat all for yourself or share with others! We love these!

For a small party- I used 8 jalapenos. Slice each one in half and remove the seeds. Side note- I always use gloved when removing the seeds!!

Take a small spoonful of cream cheese and spread inside the jalapeno. Get fresh pineapple and slice into small pieces, you can also use crushed pineapple, then add to the top of the cream cheese.

Next, take your uncooked bacon and cut in half, if it is a longer slice (you don’t want to wrap the bacon around the jalapeno more than once), then wrap your bacon around the entire jalapeno and lay flat on a baking sheet.

Cook the jalapenos at 400 degrees for 15 minutes (or until the bacon is crispy enough).

ENJOY!

Ingredients:

-8 jalapenos

-cream cheese (4 oz.)

-sliced pineapple (can also use crushed)

-bacon

{Katie’s Kitchen} Easy Baked Pork Chops

I used to be afraid to cook pork chops until I understood how easy it was to make them, and this recipe helped me realize that; it’s delicious!!!

Start out by pre-heating your oven to 400 degrees. Then using a white onion, layer onions in a  cast iron skillet or 9×9 baking dish. Drizzle onions with olive oil. Set aside.

The rub makes all the difference! In a bowl, combine kosher salt, garlic powder, onion powder, chili powder, paprika and pepper. Then, season both sides of your pork chops with the rub and place the chops right on top of the onions.

Bake for 15 minutes.

Grab your favorite BBQ sauce and take the pork chops out of the oven and brush both sides of the chops with the sauce.

Place pork chops back into the oven and bake for another 5 minutes. Then, let them rest for 3 minutes before serving.

INGREDIENTS

  • 1 large yellow onion, sliced into 1/4-inch rings
  • 1 Tbsp. olive oil
  • 4 1/4-inch thick boneless pork chops
  • 1/2 cup barbecue sauce

For the BBQ Rub:

  • 1 1/2 Tbsp. kosher salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 1/2 tsp. black pepper

We have teamed up with Long Shot's to celebrate the Kentucky Derby!
