(Kinda) Katie’s Kitchen – Butter Tarts

I forgot about Katie’s Kitchen, but it turns out that I did a cooking thing last year. I hope you like Butter Tarts. Use this recipe.

2 ¼ cups flour pastry flour is best to use but all-purpose will do
1 tbsp brown sugar
½ tsp salt
1/2 cup shortening Very cold and cut in cubes
1/2 cup butter Very cold and cut in cubes
6 tbsp ice water approximately, enough to bring the dough together

For the Filling

1/2 cup lightly packed brown sugar
1/2 cup corn syrup
1/4 cup butter melted
1 egg
1 tsp vanilla extract
1/4 tsp salt
½ cup raisins substituting, pecans, walnuts or chocolate chips also make good variations

I like the firm changes – add an additional egg, increase the brown sugar to 3/4 cup and decrease the corn syrup to 1/4 cup.

GOOD NEWS: NFL TEAM SURPRISES FORMER EMPLOYEE WITH SUPER BOWL RING

Since 1985, Carol Cullen was an executive assistant to the coaching staff of the Philadelphia Eagles football team. And then, a few years ago, she was fired by the team’s head coach at the time, who told her that her job was no longer needed.

Carol moved on and got a different job, but her connection to the Eagles remained strong.

The coach who fired her was fired himself — and a new group of coaches took his place. And, many of those coaches remembered Carol and were so thankful for all the work she put in over the years that the team recently surprised her with her very own Super Bowl ring — just like the players got when they won the big game in February.

At first, she thought it was a mistake and that the team had somehow forgotten she was no longer an employee. She learned quickly that there was no mistake. The 10-karat white gold ring, which features 219 diamonds and 17 sapphires, was all hers — a well-earned reward for decades of dedication. (ESPN)

GOOD NEWS: AIR FORCE BASE DONATES TEDDY BEARS TO POLICE

Because Staff Sergeant Teara Neimyer of Eglin Air Force Base in Florida is the mother of an eight-year-old, she knows very well just how comforting a teddy bear can be for kids — especially when they’re distressed.

With this in mind, Teara was inspired to lead a teddy bear drive to help local police have something to comfort kids they encounter while on duty.

She placed boxes all over the base — and her colleagues responded in a big way, donating over 1,000 stuffed animals.

Her mission was finally accomplished when she delivered the toys to the Crestview Police Department.

So now, thanks to Teara and all the generous people who also pitched in, local kids will have comfort and a companion when things get bumpy in their lives. (WJHG-TV)

{Katie’s Kitchen} Ranch Pulled Chicken Tacos

Ready for an easy quick dinner?? These pulled chicken tacos will be your new ‘go-to’ when you need something quick to toss in the crock pot…and it’s super delicious. Chicken, ranch seasoning, taco seasoning and low-sodium chicken broth, that’s it!

I use 3-4 chicken breasts- put in the crock pot, top with a packet of taco seasoning (I use low-sodium), and then a packet of ranch seasoning. Then, pour in 2 cups of low-sodium chicken broth over everything. Set your crock pot on low for 4-6 hours.

Once done, take two forks and shred the chicken pulling it apart. Once it’s all pulled, then let it sit and soak up the juices for another 10-15 minutes.

Then, make tacos with your favorite toppings! Or taco salad, like we did 🙂 I did add corn and black beans to the crock pot this time, which was delicious!

Ingredients:

– 3-4 boneless skinless chicken breasts
– 1 packet low sodium taco seasoning
– 1 packet Ranch seasoning mix
– 2 cups low sodium chicken broth
