Everyday Struggles of Being 8 Months Pregnant

Being pregnant and 8 months now, is amazing…I am truly blessed and can’t wait to meet this sweet little baby in just a few weeks!!

Although, there are some “interesting” things that you learn rather quickly, as soon as you enter the third trimester. It happens fast! I’m definitely getting used to the struggles of being 8 months pregnant, but boy are some things rough.

  1. Can’t see below your belly anymore– I am totally envious of anyone that has gotten laser hair removal, because shaving your legs is hard to do when your belly is blocking all possible views and doesn’t allow you to reach your calves.
  2. Pregnancy Cravings– not all bad here, unless you want something immediately and have absolutely no way of getting it to eat. That can cause serious hanger.
  3. Heartburn– for me, even water gives me heartburn along with everything else I eat!
  4. The “third trimester workout” aka…running to the bathroom. The struggle here is knowing where the nearest bathroom is even if you just went 5 minutes ago. At this point, you almost just want to stop at every bathroom you pass JUST IN CASE you need to go.

    Reaching down for things- NOPE. If it’s on the floor, then it’s staying there. This also applies to tying my shoes. I plan my outfits around whether or not my husband is home to tie my shoes, if not, then I am wearing slip-ons.

  6. Third trimester sleep deprivation- IS REAL. The more pillows the better at this point. I pretty much have a fort built around me for all possible ways I might want to roll over to and that’s if i’m even sleeping at all. 
  7. I have a new appreciation for chairs, especially this week after working at the fair. The walk from the parking lot to our WFRE tent is enough to make me want to crawl back into bed for a nap! ….but a chair is just as glorious.

{Katie’s Kitchen} Dutch Apple Pie

Apple pies are sooooo good! There’s no doubt about that. This was a fun recipe that I made together with my mom over the weekend and it was gone so fast!

I used about 2 lbs. of Honeycrisp apples from Catoctin Mountain Orchard and they were perfect and delicious!

Start out by pre-heating your oven to 400 degrees. For the pie crust, you can make your own by using your favorite recipe, or if you want a quick option, like I did, you can use the Pillsbury Pie Crust that is found in the cooler section of your local grocery store.

Then, prepare your apples- we used an apple corer slicer, slice the apples thin. Mix together with sugar, flour, cinnamon, and melted butter in a large bowl. Add 1/2 cup of raisins to apple mixture (or not if you don’t like them).

Roll out the top of your pie dough and place it over the filling while pinching the edges together and trimming the edges as needed. Brush the top and edges of crust with beaten egg.

Bake your pie at 400 degrees for 10 minutes, then turn down the oven to 350 degrees and continue to cook for 45 mins. longer or until golden brown.

While you let your pie cool on a wire rack, let’s make the glaze for the top!

For the glaze:  Mix confectioners sugar, lemon juice and 1-3 tsp milk, until you get a spreading consistency. Then, spread over top.

Delishhhh.

Ingredients: This is where I got the recipe 

Filling
-2 1/2 lbs granny smith apples, peeled, cored and sliced
-1/2 cup sugar
-1 3/4 Tbsps all purpose flour
-1 tsp cinnamon
-1 1/2 Tbsps unsalted butter, melted
-1/2 cup raisins and 1/3 cup water* – I used a combo of regular and golden – either could be used    *optional can be made without raisins
Sugar Glaze
-3/4 cup unsifted confectioners sugar
-3/4 tsp lemon juice
-1-3 tsps. milk

Ventriloquist, Darci Lynne is the youngest contestant to ever win “America’s Got Talent.” Following AGT she sold out her headlining show in six minutes, having to add more shows. She is a young ventriloquist who is inspiring the next generation to keep it alive. Darci is someone to watch for as her career is just getting started. But in her mind, positively affecting one person through her performances is all she desires.

Growing up in Oklahoma, Darci has always been close to her family and relies on their support and encouragement. In her younger years, she had a timid demeanor that she was able to overcome through talent-based pageants. She was soon introduced to the art of ventriloquism and decided to try it out for herself. Darci had hard work, grit, and discipline already instilled in her, since she came from a gymnastics background where she practiced 30 hours a week. After only having her first puppet for two weeks, Darci was determined to audition for her first talent show never knowing it would lead her to audition for the biggest talent show on earth.

Now being on stage makes her feel like she is an entirely new person. This is where she opens up and flourishes. Darci dazzles the audience, leaving them with smiles on their faces. Performing has helped Darci learn about herself and who she can be. She is so grateful to her mentor Gary Owen and her vocal coach Tiana Plemons for all they have done for her. During her “America’s Got Talent” audition she received the golden buzzer sending her straight to the Quarterfinals. Her winning final performance has over 21M views on AGT’s YouTube, more than any other finals performance on the show. Darci will be touring into next year and hopes to continue to uplift people as they watch her.

Cravings and Maternity Clothing…Oh Joy!

I was SO happy to finally have my appetite back at 14 weeks..it was miserable not wanting to eat anything. Even the first few weeks after not feeling nauseous anymore, I still didn’t really have any “cravings” for anything.

Around 20 weeks, is when I started feeling like I needed that cookie, or couldn’t turn down that chocolate cake. From there…there was no going back! CHOCOLATE. Probably my biggest craving. Milk chocolate specifically.

It’s funny because my sister-in-law introduced me to Boston Cream Pie…now I crave that all the time, too. The hard part is NOT over-consuming. I hear it all day long, “Go ahead and enjoy that you have an excuse, you’re eating for two!” Well, that is true, but I am definitely trying to be healthy (for the most part) during my pregnancy, and not get it in my head that I can eat everything in site if I want to.

Gaining weight is a good thing, but after talking to your doctor and reading pregnancy books, they have both told me you really shouldn’t eat DOUBLE the amount of food just because of the baby in your belly. So i’m eating treats when I want to and still being healthy with my food choices at the same time.

Other weird cravings that I’ve had:

-Salt and Vinegar chips, dipped in French Onion Dip 

-Pickled Okra

-cereal….this is weird to me because I never ate cereal before I got pregnant, but now I just want Special K Fruit and Yogurt all.the.time. 

With a growing belly week by week, clothing becomes a bit of a challenge, too. Maybe you’re pro at maternity clothes by now after a few kids, but this is my first and i’m definitely starting to figure things out.

  1. Maternity clothes are expensive.
  2. Maternity clothes can be unnecessary .
  3. Maternity clothes can be totally necessary.

Luckily, I have two sister-in-laws and some friends that have shared their maternity clothes with me, which is HUGE, because I can’t believe how expensive it can be to buy them. I went into the pregnancy thinking, “okay, i’m going to need an entirely new wardrobe.” Definitely not the case. I have a few essential items that are maternity, that I definitely, at 32 weeks, could not live without.

It did take me a long time to start showing, but you do immediately start feeling bloated and pants feel tight from around 10 weeks and on. Have you heard of the hair tie trick?! That is what I used for the first 20-22 weeks with my shorts and jeans.  It saved me!  I was using a belly band, but got annoyed with it after a while and stopped using it. Also, no shame in un-buttoning the top button of your jeans and wearing a long shirt or cami over top of it. It works, too.

Once, my belly got to big to get away with the tricks, I finally turned to maternity pants. Jeans are amazing. But also expensive. I did find that Jessica Simpson’s maternity brand is affordable and they feel and fit great! I love the pants that have the band that comes up and over your belly, at 32 weeks, its all about support and that does help.

The nice thing about my pregnancy being mostly during the summer was that I could wear maxi dresses and summer dresses because I could just wear all of my own clothing without having to buy new maternity dresses. If I did buy a new dress to wear, I just tried to get one with some stretch (without sizing up too much) that I would still be able to wear after baby comes.

When it came to shirts, for the most part I have been wearing all of my normal clothing and just rockin’ the bump with it. Tanks are easy, t-shirts- I just wore my stretchier ones, and other tops I just wear a cami underneath if they flare out a little over the bump.

All in all, for me, just buying a couple pair of maternity jeans for when your belly gets bigger, a few dresses (that you can wear after baby) and some stretchy shirts are all that I’ve really needed. Otherwise, I’ve been able to make a lot of my normal clothes work….so far 😉

{Katie’s Kitchen} Caramel Apple Snickers Salad

Apple theme for this month! There are so many recipes that you can make with apples, as we bring in the fall. Since I made apple bites last week, I thought I would switch things up with a cold recipe– with help from our listeners (thank you, Kathy Hupp for the recipe) I found one that I just had to try!

Caramel Apple Snickers Salad…yes. WHY NOT!? It’s the perfect dessert in a little bowl after a hot dinner.

All you need are 4-6 Granny Smith Apples, an 8 oz. tub of cool whip, instant vanilla pudding, 1/2 cup of milk, caramel syrup.

Chop up your apples and about 12 fun-size snickers into bite size pieces. Mix together in a bowl. In a separate bowl- mix the vanilla pudding dry mix with 1/2 cup of milk, then mix in the cool whip.

Pour the apples and snickers into the pudding mix. Mix it all together and then add a few more snickers pieces on top and drizzle caramel sauce over everything. Let it sit in the fridge for an hour before serving.

YUM!

Ingredients: 

-4-6 Granny Smith Apples

– 8oz. tub of cool whip

-Instant Vanilla Pudding mix (3.4oz)

-1/2 cup milk

-12 fun-sized snickers
