{Katie’s Kitchen} Easy Pumpkin Spice Cake

It’s yummy cake season, right?? This Pumpkin Spice Cake is a MUST have for this time of the year.

If anything, just make it for yourself and give your home that awesome smell! This cake is super easy and only takes 40 minutes total!

Preheat the oven to 350 degrees. Start out with a large mixing bowl (I used my kitchen aid mixer for this entire cake) and put in your Spice Cake mix. Then, add in the pumpkin puree and 3 eggs. Mix well.

Spray a 9×13 baking dish with nonstick cooking spray and spread your cake mix evenly into the dish. Bake for 30 mins.

Allow your cake to cool completely before making the frosting. This cream cheese frosting is THE BEST I’ve ever had. You could just grab a premade can of frosting if you’d like, too.

To make the frosting:

In your mixing bowl, combine cream cheese and softened butter until smooth. This is much easier using a stand mixer or handheld electric mixer.

Add in the powdered sugar to the mix, then stir in vanilla and finally, the milk. I had my mixer on a pretty low speed and made sure to stop and scrape down the sides to incorporate everything into the frosting. Mix it until it’s smooth and then spread on top of your cake! Cut and serve 🙂

You could even add cute little pumpkin candies on top to make this even more festive if you’re heading to a party.

1 box spice cake mix
1 (15 oz.) can pumpkin (not pumpkin pie filling)
3 eggs
 
For the icing:
1/2 block (4 oz.) cream cheese, softened
1/3 cup butter, softened
2 cups powdered sugar
1 tsp. vanilla
1 tbsp. milk
