And the new Bachelor is…..

ABC officially announced the new Bachelor is Matt James!  Matt is a real estate broker and says he is looking for a woman who is “selfless, honest, caring, compassionate,” and that he hopes “there’s a lot of diversity and I see every type of woman coming out of that limo.”

Matt graduated from Wake Forest University, with a degree in economics. While in college, he played wide receiver for the Demon Deacons.

After school, the entrepreneur moved to New York City, where he founded ABC Food Tours. The nonprofit organization finds creative ways to engage children in underserved communities by taking them to local restaurants and also encouraging physical fitness.

{Katie’s Kitchen} Soft Peanut Butter Cookies

It’s National Peanut Butter Cookie Day!

I haven’t made peanut butter cookies in a while…so I HAD TO!! 😉

This is an easy, one mixing bowl recipe. I recommend using a hand mixer or stand mixer for this recipe.

Grab a darker, non-stick pan and set aside. Pre-heat your oven to 350 degrees.

Start out with 1 1/2 sticks of unsalted butter(room temperature), and 3/4 cup creamy peanut butter in your mixer and mix until smooth.

Add sugars and beat on high speed until light and fluffy – 2-3 minutes.

Add eggs and vanilla and beat on low speed until combined.

Add flour, baking soda and salt and beat on low speed just until cookie dough comes together.

Line your baking sheet(s) with parchment paper.

Roll into 1″ balls and place 2″ apart on baking sheets. Then, press down slightly with fork.

Bake for 8-10 minutes. Remove and let cool on baking sheets before storing.

  • 3/4 cup smooth peanut butter 240g — not natural
  • 3/4 cup unsalted butter room temperature
  • 1 cup sugar 200g
  • 1 cup brown sugar 205g packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all purpose flour 390g
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Garth Brooks will perform for one night only at 300 drive-in theaters across the country.

He told Good Morning America today, “I am so excited to get to play again. I have missed it so much and want to get back to it. This drive-in concert allows us all to get back to playing live music without the uncertainty of what would be the result to us as a community. This is old school, new school, and perfect for the time we are in.”

Tickets are $100 per car and will go on sale starting June 19th. The concert is on June 27th

Essential Superstars with Tranquillity at Fredericktowne

We went out today with Tranquillity at Fredericktowne to recognize one of our Essential Superstar Businesses!  We handed out gift bags to Frederick County Emergency Communications Center – The first voices you hear in an emergency, the first, first responders were there through the entire quarantine and will always be there when you need them. Always overlooked, they work through their 12 hour shifts never knowing the outcome of some of the worse calls they have ever heard.

Local Teens Start Free Grocery Delivery for Seniors

Two teenage boys in Potamac, Maryland, started delivering groceries to their grandparents to help keep them safe during the COVID-19 Pandemic. Their hard work lead to a delivery service for senior citizens all across the country.

16-year-old Dhruv Pai and 15-year-old Matt Casertano, realized that many other seniors in their community also needed some help, so they started making more deliveries.

In doing so they started to wonder about all senior citizens in the country that also may need some help getting groceries. So they created a group called Teens Helping Seniors and recruited other young people from all over the country to get groceries, medicine and other essential supplies into the homes of those who are at a greater risk of COVID-19.

There are now 14 chapters across the country AND STILL GROWING from the west coast to the east coast. Dhruv and Matt are working with all the volunteers, trying to make sure as many seniors as possible get the help they need.

{Katie’s Baby Blog} Strawberry Picking…and Eating

It’s strawberry season! A lot of farms in our area have been advertising that their strawberry patches are ready, so Lily and I went and had a blast!

Lily LOVES strawberries, she calls them “berries” and begs fro them everyday. My husband also LOVES strawberry anything so I was ready to pick a lot!

We went to Glade Link Farms in Keymar, MD and it was so pleasant. Lily and I had my cousin and her 1 year old daughter with us so we were allowed to pick in the same area.

Lily and her cousin Laney were so cute picking the strawberries and loved carrying around the little bucket, but once Laney figured out she could eat them….the girls went CRAZY! Lily had a cute little pink dress on that quickly turned bright red with strawberry juice; she looked like a chipmunk with her cheeks full of “berries” and her lips and face was covered in red juice. But, it was way too cute, and trying to stop them….yeah right! Those two had so much fun picking and eating them and then they decided its faster to just eat the strawberries right out of the buckets that we picked, so the buckets took a little bit of a hit, too.

It was something fun to do with little toddlers! I was a little nervous that they would be too young and not understand and want to run around instead of pick, but they were all about it!

I can’t wait to go back to pick blueberries and flowers soon!

{Katie’s Kitchen} Poolside Pineapple Dip!

Hanging by the pool and want a snack? Go grab your Poolside Pineapple Dip from the fridge and crackers and enjoy!

This dip is nothing like i’ve ever had, but I HAD to try!!  If you’re a ham and pineapple fan…you’re going to love this.

Grab a small mixing bowl- add 8oz block of softened cream cheese, 2 tbsp. of sour cream and 1/4 cup of pineapple juice and mix until smooth.

Then comes your toppings! Add a cup of cheddar cheese, chopped green onions, 1/4 cup (or more) or crushed pinapple, chopped ham, and bacon bits!

Enjoy with crackers by the pool!

**NOTE: I doubled my recipe for a larger party.

Ingredients:

-8 oz softened cream cheese

-1/4 cup pineapple juice from can of crushed pineapple

-2 tbsp. sour cream

-1 cup cheddar cheese

-Toppings to taste:  chopped green onions, crushed pinapple, bacon bits.
