{Katie’s Kitchen} Campfire Cones!

Looking for a fun new treat or activity for the kids this weekend?! Campfire Cones are perfect and delicious!

Don’t let the name deceive you…no need for an actual campfire (but of course you can), you can make these in the oven!

Start our with an ice cream cone. We used waffle cones- take peanut butter and spread it around the inside of the cone, then stuff your cone with marshmallows (the mini marshmallows seem to work best so you can fit other ingredients), chocolate and literally any other topping you might want to add.

The fun part about this s’more treat is it doesn’t have to just be chocolate and marshmallow…you can add Reese’s cups, butterscotch chips, m&m’s, strawberries, banana slices..whatever you want!

Then gently wrap your cone in foil, covering the top first, then the bottom and rolling in the sides.

To bake: pre-heat the oven to 350 degrees and bake for 5-7 minutes.

Campfire: heat over the fire for 5 minutes.

Enjoy…and then make another!!!!

Ingredients:

-Waffle or cake cones

-Peanut butter

– Chocolate (chocolate chips, or Hershey bars)

-Mini Marshamallows

-Other: strawberries, banana slices, butterscotch chips, etc.

Happy birthday wishes go out to Dustin Lynch! The Tennessee native celebrates his 35th birthday today.

Lady Antebellum gave an at-home performance of their new song, “Champagne Night,” on The Tonight Show Starring Jimmy Fallon on Monday night. The song was released as a single in April after they made a guest appearance on the Season 2 premiere of NBC’s show Songland.

{Katie’s Kitchen} Barbecue Chicken Pizza

Friday night pizza night! Pizza kits are so popular right now….whether you are getting one from a local pizza shop or buying one from the grocery store. I picked up a pizza kit from Costco.

We decided to go BBQ style with our pizza, mainly because we always make cheese or pepperoni, and wanted to mix it up! also…it’s the ingredients I had in my fridge!

SUPER easy… Spread 1/4 cup of your favorite BBQ sauce over the dough leaving 1/2 in. bare in from the edges. Then, sprinkle mozzarella cheese and smoked Gouda cheese on top (about 2/3 cup each). I only had Mozzarella, so I just used that.

Chop up your cooked chicken, (you can use rotisserie, or baked chicken) I had grilled chicken that I purchased from the store, then toss lightly in BBQ sauce and toss on top of the cheese.

Thinly slice red onion and sprinkle as much as you like over the pizza. Then bake 450 for 8-10 minutes (or according to your directions).

Garnish with fresh chopped cilantro!!

{Katie’s Kitchen} Whipped Coffee

You’ve probably seen the whipped coffee trend circulating on social media lately, and everyone raving about how delicious it is- well for Katie’s Kitchen today, I tried it…and yes, yes, it is delicious!!!

and SUPER EASY. If you want to ‘whip’ up a Whipped Coffee, you can, in seconds!

You’ll need – Instant Coffee, Milk (or half and half, or even coffee creamer), granulated sugar, hot water.

I used 2 TBSP. of these each ingredients- Grab a small mixing bowl, and add in the instant coffee, sugar and lastly the hot water.

With a hand mixer (trying to whip yourself with a whisk will take some time) whip the mix for 3-5 mins. until it is a light brown color and very fluffy and light looking.

Pour milk over ice in a glass or mug then scoop out the whipped coffee and spoon on top of the milk in the cup. Then, enjoy! :

Ingredients:

for the coffee: (It is best to use a hand mixer)

2 tbsp. Instant Coffee

2 tbsp. granulated sugar

2 tbsp. hot water

TO make the drink:

Pour a glass of milk over ice.
