Life is crazy. Here is 13-ish minutes of a dude restoring a wrecked Harley Davidson Zippo Lighter to its former glory. Fun fact: I never really understood how lighters worked before I watched this video. Check it out!

It may be called a breakfast casserole, but we enjoyed it for dinner and then breakfast and lunch the next day!
We had a lot of leftover ham from Easter and were sick of ham sandwiches, so I decided to bake the rest into a breakfast casserole.
Pre-heat the oven to 350 degrees.
I started out with 12 eggs in a large mixing bowl, adding 2 cups of milk and then any chopped vegetables you have on hand (I used a tomato and onion). Add salt and pepper then whisk everything together.
Using a 9×13 baking dish (grease the pan)….peel and chop up potatoes (I used 4 medium sized) into small cubes and laid them on the bottom of the dish spread evenly. Then, cube your ham. You can use about 2 cups; I definitely used double that and it was perfect.
Then pour your egg and veggie mixture over top of everything. Add 2 cups of shredded cheddar cheese and gently mix in.
Bake for 1 hour 15 mins. Then, enjoy!
This is a great dish to make ahead and store in the fridge overnight, then pop into the oven the next morning.
It also serves a lot of people! So a great option for when you have guests over…and it freezes well, too if you want to save in the freezer.

Three people of different skill levels make hot dogs. The best chef is super interesting. The worst is really funny. I need some hot dogs…
The highlight of my birthday weekend was getting to play a game night (well afternoon it was like 3 PM) with my family. This was my sister’s idea. She had played a jackbox party game using zoom with her friends. It was a ton fun and our parent didn’t have trouble being part of the action!
NOTE: Make sure to share your PC audio if you are screen sharing the game!
Jackbox has a guide for doing this! https://www.jackboxgames.com/how-to-play-jackbox-games-with-friends-and-family-remotely/
The games aren’t free, but I already had them for in person parties. Remember when those were a thing…

Easter may have looked a little different this year….watching church services streaming on social media, finally getting dressed up in something a little nicer than comfy clothes and not being able to have a big family dinner with siblings, cousins and the entire crew, but we made it work and Lily had such a fun day!
We started out with her finding her little Easter basket in the living room filled with unicorn slippers (shes obsessed with my slippers), her very own set of {play} car keys (she always wants to play with our keys), a cute new bathing suit, bunny ears, new forks and spoons and candy!
Then, we started cooking (a new recipe from Easter dinner coming to Katie’s Kitchen this Friday!) and played with her new toys.
After a short mid-morning nap, we had lunch and then she saw that there were Easter eggs hidden all over our back yard! ..She figured out that there was candy inside the eggs that were in her basket that morning so, she immediately wanted to go open all of the eggs hidden! So, we got dressed in her Easter dress, that we’ve been waiting weeks to wear, and headed outside!
She was so funny making excited faces and pointing at the next new egg she spotted! We had a blast!…and she got to eat A LOT of mini M&M’s 🙂
It was a different Easter than we’re used to, but we will take it!
