Interesting People #40: United Way of Frederick County VITA Program


This episode is a joint interview featuring Malcolm Furgol the Director of Community Impact  & Rebecca Full the VITA program manager from the United Way of Frederick County. We take a deep dive into the Volunteer Income Tax Assistance (VITA) and also get more follow up information about how the United Way is making use of the Alice Report.

{Katie’s Kitchen} Breakfast Egg Cups!

Healthy, gluten free, easy and SO delicious!!

Tim ate two of these right out of the pan immediately and LOVED every bite…so did I 😉

These are paleo and super healthy, but I think the best part is that you can cook a bunch of these and put them in the fridge to eat during the week. Put two in a baggy and take them to work to re-heat for a delicious breakfast.

Literally all you need for this recipe is bacon (I used natural, uncured), asparagus, and eggs.

Grab your muffin pan, I used coconut oil to first “grease” the inside of each of the cups. Next, lay the bacon strips across the cups so they stick out of the sides a little. Crack an egg inside the cups on top of the bacon. Then, clean and chop the asparagus spears into small pieces and toss on top. Sprinkle salt and pepper to taste and that’s it!

Put it in the oven at 400 degrees to cook for 15 to 17 minutes depending on how well done you want the eggs.

  • Coconut oil for the pan
  • 12 eggs
  • 12 strips uncured organic bacon, cooked
  • 8 aspara­gus spears, cut into small pieces
  • Sea Salt and black pep­per

{Good News} Women Battling Cancer Gets Puppy Surprise

Courtney Gessford of Sacramento, California, has been through a lot since she was diagnosed with cancer a few years ago. She’s been through surgeries, radiation and chemotherapy.

Helping her take her mind off her troubles has been her eight-year-old dog, Clyde.

Knowing that Courtney loves dogs so much, 15 of her friends invited her to a surprise party at an animal shelter.

She was blindfolded and brought to the shelter. And when the blindfold was lifted, her friends were there, with each of them holding a puppy.

Calling it the best moment of her life, Courtney was thankful to her friends — and to the shelter — for organizing the puppy ambush. And, all the smiles and laughter she enjoyed are sure to give her strength to continue her medical battle. (ABC News)

NFL Player Offers Free Beer For Everyone In Philly If The Eagles Win

Lane Johnson is an offensive tackle for the Philadelphia Eagles who, of course, will be playing in the Super Bowl in two weeks.

During an interview, Lane made a great offer to fans, saying that if the Eagles win, he’ll give out beers to “everybody.”

That’s right. Lane Johnson will buy a round of beers for every person in Philadelphia if he ends up with a Super Bowl ring.
