{Katie’s Kitchen} 4th of July Fireworks Cookies

Talk about festive! These cookies are the perfect sweet treat for your 4th of July party!

I used my Kitchen Aid Mixer for this recipe because it made the mixing so much easier. In a bowl add- yellow cake mix, 8 tbsp. melted butter, 1 tsp. vanilla extract, 4 oz of cream cheese softened, and 1 egg. Mix it all together until you have a soft dough.

Then, using a spoon, mix in Oreo cookie chunks (about 14 crushed into chunks), 1/2 cup of red, white, blue M&M’s and 1/4 cup of red, white, blue sprinkles.

Refrigerate the dough for 30 minutes to an hour. When almost ready to take out, preheat the oven to 350 degrees.

Grab a cookie sheet and roll the dough into even dough balls. My batch made about 30 cookies. Add extra sprinkles and M&M’s to the tops of the the dough balls, if desired.

Place the dough balls on the cookie sheets and bake for 10-12 minutes. Remove from the oven and cool on the cookie sheets for 2 minutes, before moving them to a piece of parchment paper. YUM!!!!!

(Kinda) Katie’s Kitchen – Butter Tarts

I forgot about Katie’s Kitchen, but it turns out that I did a cooking thing last year. I hope you like Butter Tarts. Use this recipe.

2 ¼ cups flour pastry flour is best to use but all-purpose will do
1 tbsp brown sugar
½ tsp salt
1/2 cup shortening Very cold and cut in cubes
1/2 cup butter Very cold and cut in cubes
6 tbsp ice water approximately, enough to bring the dough together

For the Filling

1/2 cup lightly packed brown sugar
1/2 cup corn syrup
1/4 cup butter melted
1 egg
1 tsp vanilla extract
1/4 tsp salt
½ cup raisins substituting, pecans, walnuts or chocolate chips also make good variations

I like the firm changes – add an additional egg, increase the brown sugar to 3/4 cup and decrease the corn syrup to 1/4 cup.
