{Katie’s Kitchen} Pumpkin Pretzel Candies

HAPPY HALLOWEEN!! Often, parents find themselves scrambling for time when their kids have a Halloween party coming up or even an adult party! These are a great, cute and festive treat that you can make in just FIVE minutes and bring with you for friends to snack on!

All you need are pretzel snaps, M&M minis and chocolate wafers or a Hershey kiss, if you can find them…I just used milk chocolate squares from a chocolate bar and made them a little smaller to fir on the pretzel.

You can make as many as you want! The easy part is that you just pop them in the microwave. First, lay out pretzels on a plate and then the chocolate in the middle right on top of the squares. Then, put them in the microwave for 30-45 seconds…you may have to test this out the first time depending on your microwave.  You want the chocolate to be just melted enough to press M&M’s into it.

Then press 6 little mini orange M&M’s around in a circle into the chocolate with one more in the middle, then grab a green one for the top and turn it on its side for the stem! Done! Make as many as you want– and let them sit for a few minutes to cool before storing and taking to Ithe par-tay!!! The perfect combo of salty and sweet and so colorful for fall!

{Katie’s Kitchen} Healthy Pumpkin Oatmeal Cookies

Finally! Something that’s pumpkin and healthy! A very simple and nutritious recipe that only takes 15 minutes from start to finish! This is a great breakfast treat or post-workout snack, too.

All you need is pumpkin puree, oats, 2 packets of Stevia (or more to taste), pumpkin pie spice, cinnamon and pure vanilla extract.

Pre-heat your oven to 350 degrees. Grab a mixing bowl and add 2.5 cups of oats along with all of your other ingredients. Go ahead and add chocolate chips, too, if you’re feeling like you want a little something extra!

Mix everything in the bowl to form a dough and add additional ingredients to taste. Scoop out the pumpkin oat mix and make about 10 cookies with your hands. Spray a baking sheet with non-stick cooking spray and place your cookies on the pan and then into the oven for 10 minutes.  That’s it!!

  • 2.5 cups oats
  • 1 cup organic pure pumpkin puree
  • 2 packets stevia or 10-15 stevia drops, or to taste
  • Optional Add-Ins:
    1/2 tsp pumpkin pie spice
    1/2 tsp cinnamon
    1/2 tsp pure vanilla extract
    1/2 cup of chocolate chips, coconut, walnuts, raisins or any other dried fruit or nuts
