The Official Mo ACM Review

If you were like me you spent last night relaxin on the couch with the Academy of Country Music Awards! A good show becomes a great show when Reba takes the stage!  And not only did she host the show, but we got a performance of her new song!

Here are my highlights of the show overall

Love the new LANCO song!  It was cool to see them perform it live!  Blake Shelton ‘s new song Gods Country is everything you love about Blake.  Its nice to see him bringing back a little bit of “Old” Blake.  The Luke Combs/ Brooks & Dunn was amazing!  That was a big highlight for me!

I also loved getting to see new music from Carrie Underwood, Keith Urban and Eric Church.

And what a return for George Strait!  Poor guy had to sing 3 times last night….. #ButImNotComplaining

The only complaint I have is there were so many collaborations.  They were all good but I would have loved to see a little less of the collabs and added a few more new artist performances.

Overall loved getting to see our favorite artists all in one place!  Big shout out to Keith Urban for winning Entertainer of the Year!  Dude puts on an amazing show and more then deserves the recognition.  Also super happy for Dan (My Pittsburgh Brother) + Shay!  Big night for them and its about time!

Dan + Shay Win Big at the ACM Awards

MY FAVORITE GUYS! So ecstatic about their huge wins last night. They won the first three trophies of the night — Single, Song (both for “Tequila”) and Duo of the Year. Add their amazing duet performance of “Keeping Score,” with Kelly Clarkson to the list of success.

Check out the throwback video of when I saw them last summer at Jiffy Lube Live. I got chills when the crowd took over!

‪Huge congrats to my favorite guys, Dan + Shay for killin’ it last night at the #ACMawards2019. Throwback to last summer when the crowd took over! #Tequila ‬

{Katie’s Baby Blog} Sleep Training Lily

There are so many ways to ‘sleep train’ your baby. I have read article after article about what is the best method and was finally ready to try to ‘sleep train’ Lily after she turned 4 months old.

I know people that put their babies in their own cribs at one month old, 4 months old, 6 months old and some that let their kids sleep with them until they were one or older. To each their own. I have found that you try it out whenever you and your child are ready. So four months old it was for us!

I loved having her right next to me every night in her bassinet. We never really had a problem with her crying other than when her pacifier falls out and she wants it back in. Otherwise, she’s a great sleeper.

I wanted to try at three months old, but I was nervous about how she was going to do, so I kept pushing it off thinking if she’s just one month older then she will be ready.

So we waited until the weekend because I figured I would be up all night with her and didn’t want to be too tired for work. Side note- we also started feeding her rice cereal, which she LOVES! So, right before bed I filled her belly with a bottle and cereal and then let her bounce in her bouncer for a little while until I could tell she was tired.

Then, I put her in her sleep sac, closed the blinds and stuck her in her crib with her pacifier and kissed her goodnight. SHE WAS OUT!

I went back out into the living room to watch TV and Tim kept reminding me that I don’t need to stare at the monitor for hours…that “it has sound”, if she wakes up, but I couldn’t help it!! My sweet little baby was in her own bed!

She did great. She woke up a couple times, but only when she lost her pacifier and wanted it back in her mouth. The first two nights we got up probably 5 times, but the third night she slept through!

The night’s that she did cry, each time she cried we would wait a minute or two longer before going into her room.

The third night, once I woke up realized that I hadn’t gotten up at all to her crying, I checked the monitor and saw she was still snoozing soundly…sleeping like a big girl 🙂

I am also trying to a pre-bedtime schedule for her, which I think makes a big difference.

Dinner time with a bottle, a little bit of playtime, then bath or PJ time, then we read a book and then go to bed. Seems to work well!

Hopefully she stays on track with sleeping so well in her own room, but we all know how babies are! They do what they want 🙂

{Katie’s Kitchen} Asian Chicken Lettuce Wraps

Brought to you by Strop Flooring America

I have always been a fan of this delicious, easy and healthy recipe that is close comparison to the Asian chain restaurant, P.F. Changs. These….could be even better!

You want to start out with the sauce so it can sit for a few minutes and so it is ready to go when you need it. In a bowl, mix peanut butter, soy sauce, hoisin sauce, sesame oil, rice vinegar, honey, sweet chili sauce (I didn’t add this because I couldn’t find it. It still tasted great), garlic powder and powdered ginger. Whisk it all together.

Heat peanut oil or olive oil in a pan and add ground chicken and cook until browned. Chop up your veggies, while chicken cooks.

Add onion, peppers, water chestnuts and cook until peppers are soft. I used chopped mushrooms instead of water chestnuts.

Once everything cooks, add the sauce and simmer on low heat until everything is evenly coated.

Pull off the biggest/best pieces of romaine or butter lettuce and scoop out your chicken mixture into the lettuce, then serve!

You could also serve it over noodles or rice.

Ingredients

  • 1 lb ground chicken
  • 1 TBS peanut oil
  • ½ onion minced
  • 1 cup red or green pepper diced
  • 1 8 oz can water chestnuts drained and minced
