Chocolate Peanut Butter Cupcakes

I didn\’t win the bake-off, but I did have a bunch of fun making my very first batch of cupcakes! I went old school and made everything from scratch. I used the recipe from one of my favorite baking bloggers called The Joy of Baking.

I finally bothered to practice my piping skills and took the extra step of sifting the powdered sugar and the cocoa powder. I think the frosting turned out perfect! Happy to add this sweet to my list of treats!!!

I can\’t believe I did the same style as Katie! Big ups to Gabby!!!!

Cupcakes

1 cup (200 grams) granulated white sugar

1 cup (130 grams) all-purpose flour

1/2 cup (50 grams) unsweetened cocoa powder (natural or Dutch-processed), sifted

3/4 teaspoon (3 grams) baking powder

1/2 teaspoon (2 grams) baking soda

1/4 teaspoon (1 gram) kosher salt

2 large eggs, at room temperature

1 cup (240 ml/grams) buttermilk, at room temperature

1/3 cup + 1 tablespoon (90 ml/grams) flavorless oil (corn, vegetable, safflower or canola oil)

1 teaspoon (4 grams) pure vanilla extract

Frosting

1/3 cup (80 ml/grams) full fat cream cheese, at room temperature

1 cup (225 grams) unsalted butter, at room temperature

3/4 cup (90 grams) confectioners (powdered or icing) sugar, sifted

1 teaspoon (4 grams) pure vanilla extract

3/4 cup (180 ml/grams) smooth peanut butter

2 teaspoons (10 grams) molasses (optional)

1/8 teaspoon salt

Cannoli Filled Cupcakes

This week I entered my first cupcake competition here at the station and I CRUSHED IT. Okay, sorry. I don’t wanna rub it in…But these cupcakes were damn good and I was even shocked at how good they were. Check out the process of these beauties.

{Katie’s Kitchen} Easy Peanut Butter Frosting Cupcakes

My favorite cake is chocolate with Peanut Butter frosting…so why not try with cupcakes for our station Cupcake Bake Off today! Of course, Katie’s Kitchen HAD to be involved.

I used a classic boxed Devil’s Food Cake mix from the grocery store, follow the recipe on the back to bake your cupcakes!

For the frosting:

Start out with 2 sticks of softened butter and 3/4 cup of creamy peanut butter. I used my stand mixer on low for 2 minutes until blended with the paddle attachment.

Then, add 2 1/2 cups of powdered sugar and mix on low. Add the remaining 2 cups of sugar and the vanilla extract and half of the whipping cream. Beat on low, then increase to medium-high speed for about 2 minutes until the frosting is fluffy.

Spread on cupcakes when cooled. Add a peanut butter cup for topping!
