It’s a mini Tom Whalen!  7-year-old Bryan Rumfelt loves to read to his grandmother every night before bed time. Bryan was such a great reader that she suggested Bryan read to kids all across America who were missing story time at school due to COVID-19. {Katie’s Kitchen} Strawberry Mint Sangria

It’s strawberry season!! Recently my daughter and I went and picked strawberries, we made a delicious strawberry cake, so with the leftover strawberries that I had, I made sangria!

It’s super easy and taste delicious on a hot summer day!

Start out chopping your strawberries into smaller pieces (I quartered them). Add them to the bottom of your pitcher.

Add a handful of mint to the pitcher, then 3 tbsp. of sugar.

Next, Squeeze half a lemon into the pitcher and add 1/2 cup of club soda.

Then, pour in 2 bottles of your favorite Rose wine. Add lemon slices on top to garnish.

Serve with a strawberry on the side of your glass and enjoy!

Ingredients:

-2-3 cups Strawberries chopped

-3 tbsp. sugar

-1/2 cup of club soday

-2 bottles Rose wine

-1 cup of mint leaves

-1 lemon

Essential Superstars with Tranquillity at Fredericktowne Week 2

Today we went out with Tranquillity at Fredericktowne to deliver goody bags to McClintock Distillery.

McClintock Distillery made hundreds of gallons of hand sanitizer for their community health care facilities and providers when the COVID supply shortage took over. AT NO COST

This home town distillery went above and beyond and made and provided free of charge Gallons and gallons of hand sanitizer and distributed to any health care facility that requested it. During the time of no hand sanitizer to be found,they stepped up and didn’t worry about profits, but worried about keeping their community safe.

Big shout out to McClintock Distillery for being our Essential Superstar of the week!

ABC officially announced the new Bachelor is Matt James!  Matt is a real estate broker and says he is looking for a woman who is “selfless, honest, caring, compassionate,” and that he hopes “there’s a lot of diversity and I see every type of woman coming out of that limo.”

Matt graduated from Wake Forest University, with a degree in economics. While in college, he played wide receiver for the Demon Deacons.

After school, the entrepreneur moved to New York City, where he founded ABC Food Tours. The nonprofit organization finds creative ways to engage children in underserved communities by taking them to local restaurants and also encouraging physical fitness.

{Katie’s Kitchen} Soft Peanut Butter Cookies

It’s National Peanut Butter Cookie Day!

I haven’t made peanut butter cookies in a while…so I HAD TO!! 😉

This is an easy, one mixing bowl recipe. I recommend using a hand mixer or stand mixer for this recipe.

Grab a darker, non-stick pan and set aside. Pre-heat your oven to 350 degrees.

Start out with 1 1/2 sticks of unsalted butter(room temperature), and 3/4 cup creamy peanut butter in your mixer and mix until smooth.

Add sugars and beat on high speed until light and fluffy – 2-3 minutes.

Add eggs and vanilla and beat on low speed until combined.

Add flour, baking soda and salt and beat on low speed just until cookie dough comes together.

Line your baking sheet(s) with parchment paper.

Roll into 1″ balls and place 2″ apart on baking sheets. Then, press down slightly with fork.

Bake for 8-10 minutes. Remove and let cool on baking sheets before storing.

  • 3/4 cup smooth peanut butter 240g — not natural
  • 3/4 cup unsalted butter room temperature
  • 1 cup sugar 200g
  • 1 cup brown sugar 205g packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all purpose flour 390g
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
