It was amazing to see people this weekend! The kick-off was a blast, and I have to give a million thanks to Tranquillity at Fredericktowne for sponsoring our charity cycling.

So far, I have 6.5 miles done and have managed to raise $350 for the Boys and Girls Club! I have a lot of work to do, but all the support will make this a blast. Let’s see how I do tomorrow!

{Katie’s Kitchen} Turkey Taco Lettuce Wraps!

Brought to you by Catoctin Mountain Orchard.

We’re getting healthy this week!!

A great summer meal- it’s light and refreshing and it’s TACOS!

For this recipe I used a pound of ground turkey meat and cooked it and then added taco seasoning according to the McCormick’s seasoning packet.

Then while that was cooking I chopped red onion, tomatoes, avocado and got my cheese ready.

I got fresh romaine lettuce and washed and dried it then picked the larger leaves that looked like the best taco “wrap.”

Once the turkey taco meat was finished- I laid our my lettuce wraps, and topped my tacos with my favorite toppings!

INGREDIENTS:

-Ground Turkey

-tomato

-red onion

-taco seasonings: cumin, paprika and chili powder OR Seasoning packet

-romaine lettuce

-cheese

{Katie’s Baby Blog} Lily is Still Not Sure About the Beach…

Last week my family and I took a trip to Cape Cod, MA where we stayed in a super cute little cottage right in Plymouth on White Horse Beach!

It was so fun. I’ve never really traveled that far up North and everything is so beautiful! Our cottage house was right on the beach…I mean, opened the door to the deck and walk down the stairs onto sand, close!

So, I warned Lily multiple times about us going to the beach because she DID NOT like the sand the first time we went. She didn’t love it this time either. BUT! I did get her to walk in the sand and the water by putting water shoes on her feet! That was HUGE for her!!! She was slow and didn’t want to walk around too much, but she did it and we were so proud 😉

The rest of our trip was filled with us visiting Salem, MA and going to the Salem Witch Museum, which I highly recommend, if you get the chance. The entire town of Salem is SO cool and apparently the BEST place to be on Halloween.

We saw the most beautiful sunsets on Cape Cod, Encounter Beach is amazing for that! But, my favorite part by far…THE FOOD!!! The LOBSTAH rolls…omg…I would go back (drive 8 hours) just to have another from there. All of the seafood was so fresh and delicious.

Plymouth is a really cool town to tour as well. We went to Plymouth Plantation and saw the Pilgrams little town and the houses they lived in, we went to Plymouth Rock, and shopped in downtown Plymouth– that was probably my favorite place we visited.

Definitely an amazing trip! I can’t wait to see how Lily does the next time we head to the beach…I’m hoping each time we go she likes it even more!!

Gabby’s Good News: Largest Ocean Clean Up in History!

At the end of June the Ocean Voyages Institute’s plastic recovery ship, docked in Honolulu. In just 48 days they recovered 103 tons (206,000 lbs.) of plastic from the Great Pacific Garbage Patch. Which set a new a record for the largest at sea clean-up to date. You can find the Patch between Hawaii and California with a trash pile twice the size of Texas!

Most of the trash included fishing nets and everyday plastics.

Catching plastic from one of the most polluted areas in the ocean is no easy task. The crew spent long days skimming areas of highest plastic concentration, grappling nets, and dragging loads of plastic aboard their recovery ship. They use GPS trackers and drones to help them locate high debris areas. While also researching more effective collection techniques.

Next year, the Institute has even higher goals. They plan to upscale their plastic retrieval and send out three boats to the same area. Go team!

Gabby’s Good News: Daughter Saves Mom’s Life

You’ll do anything for your kids, right? No matter what. Well, the tables have turned in this story.

Sarah from La Quinta, California donated her kidney to save her mother’s life. Her mother Laura Fisher, was told her kidneys were failing and so she joined the wait list. But her daughter stepped forward and was the perfect match.

Although COVID-19 has made it difficult to schedule this life saving surgery they’re scheduled for the transplant this week. Recovery will look different than normal because no visitors will be allowed but they just feel lucky enough to have each other for love and support along the way.
