{Katie’s Kitchen} Turkey Meatballs

This turkey meatball recipe…might be my new favorite way to make meatballs! They’re super juicy (normally turkey can be dry) and the gravy is delicious over mashed potatoes or egg noodles.

Start out with a skillet on the stove top– and add minced onion and garlic, saute for 2 mins. Then, add in 1/4 cup of chicken broth, and 1 tbsp. of Worcestershire sauce, for 2 mins. Take off the heat and set aside.

In a mixing bowl add 2 lbs. of ground turkey meat,1/2 cup fresh parsley minced; plus more for garnish, 1/4 cup green onion thinly sliced, 1/4 cup chicken broth, 1 Tbsp Worcestershire sauce, 1 egg beaten, 1/2 cup bread crumbs seasoned, 1/2 cup Parmesan cheese grated, 1 tsp kosher salt plus more to taste, 1/4 tsp black pepper.

Shape your meat into 20- 25 meatballs.

Start the gravy, boil 2 cups of chicken broth, add the cornstarch dissolved in cold water, followed by the Worcestershire sauce. Cook  until thickened. Set aside.

In a large skillet, heat a tablespoon of olive oil and one tablespoon of butter.  Add the meatballs and cook until browned on both sides.

Then, pour gravy into the skillet and cover for 15-20 minutes until cooked through.

Serve and enjoy!!

  • 2 cups chicken broth
  • 1 1/2 Tbsp Worcestershire sauce
  • 1/2 cup water cold
  • 2 Tbsp cornstarch

 

Essential Superstars with Tranquillity at Fredericktowne Week 3

We went out with Tranquillity at Fredericktowne to deliver goody bags to our weekly winners for Essential Superstars, Yellow Springs Vet Clinic!  During the Covid-19 crisis, Yellow Springs Veterinary Clinic saw a huge uptick in business. The girls of YSVC dealt with new protocols every day. The building was locked. Vet techs had to suit up & retrieve sick pets from the parking lot, while owner’s waited in their cars & communicated with the vet via Facetime or telephone. These girls were very innovative in how they were able to keep everyone safe under very stressful conditions for everyone amid their own personal fears & anxiety.

Awesome job!!  You are Superstars!

{Katie’s Kitchen} Strawberry Mint Sangria

It’s strawberry season!! Recently my daughter and I went and picked strawberries, we made a delicious strawberry cake, so with the leftover strawberries that I had, I made sangria!

It’s super easy and taste delicious on a hot summer day!

Start out chopping your strawberries into smaller pieces (I quartered them). Add them to the bottom of your pitcher.

Add a handful of mint to the pitcher, then 3 tbsp. of sugar.

Next, Squeeze half a lemon into the pitcher and add 1/2 cup of club soda.

Then, pour in 2 bottles of your favorite Rose wine. Add lemon slices on top to garnish.

Serve with a strawberry on the side of your glass and enjoy!

Ingredients:

-2-3 cups Strawberries chopped

-3 tbsp. sugar

-1/2 cup of club soday

-2 bottles Rose wine

-1 cup of mint leaves

-1 lemon

Essential Superstars with Tranquillity at Fredericktowne Week 2

Today we went out with Tranquillity at Fredericktowne to deliver goody bags to McClintock Distillery.

McClintock Distillery made hundreds of gallons of hand sanitizer for their community health care facilities and providers when the COVID supply shortage took over. AT NO COST

This home town distillery went above and beyond and made and provided free of charge Gallons and gallons of hand sanitizer and distributed to any health care facility that requested it. During the time of no hand sanitizer to be found,they stepped up and didn’t worry about profits, but worried about keeping their community safe.

Big shout out to McClintock Distillery for being our Essential Superstar of the week!
