{Katie’s Kitchen} The BEST Bruschetta

Nothing is better than fresh ingredients straight from your own garden. We specifically grew Roma tomatoes this year because I wanted to make delicious brucschetta…this is my favorite recipe! It is such a simple summer recipe!

If you’re making this for a few people, then 4 tomatoes is fine. If you’re making it for a party, use 8.

I chopped my tomatoes into small pieces while removing the seeds and then, placed them into a bowl.

Add in the Parmesan cheese, basil, and garlic and stir. Then, Mix in the balsamic vinegar, olive oil, salt, and pepper.

Place the bowl into the Refrigerator while you prepare the bread.

Then, brush your sliced french baguette with olive oil and place on a grill or a pan in the stove (350 degrees for 5-7 mins.) to toast.

Once done, remove from heat and top with your homemade Bruschetta and cheese!

Ingredients:

  • 8 roma tomatoes seeded and diced
  • 1/3 cup chopped fresh basil
  • 1/4 cup shredded Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 loaf French bread toasted and sliced

 

Assault By Slurpee

A Slurpee from 7-Eleven is a great way to beat the heat on a summer day…but no one wants to wear one. A guy in Florida who thought he was charged too much for his Slurpee expressed his outrage by pouring the slushy beverage on a store worker, and that landed him in jail for battery. Cops say 40-year-old Brian Duffy told them he argued with the employee over the price of the drink, but that he didn’t recall “spilling” it on her. A quick look at the store’s surveillance footage, however, clearly showed that he very much did. Now, ol’ Brian’s currently being held in jail on $2,500 bail & has been ordered to stay away from the victim.

ANDY NOTE: I hear he could be sentenced to between 7 and 11 years in jail.

Gabby’s Good News: WFRE Gets a Love Letter That Helps St. Jude

 

OUR HEARTS ARE BURSTING WITH LOVE. A sweet listener, 13 year old Anna from Thurmont, MD wrote us a love letter during her time at home. Within that letter she explains that she’s been making masks and selling them to raise money for the kids at St. Jude Children’s Research Hospital.

Tour de Frederick #3: 26.5 Miles and $600

What a bananas update! Yesterday was a great day for finally biking for over an hour and getting a steady flow of donations. My endurance isn’t what it used to be! I think this could be my personal best day of the week. I am planning to do somewhere between 6 to 8 miles tonight.

Gabby’s Good News: Teens Create Free Online Tutoring

In the beginning of the COVID-19 pandemic, high school senior Ajay Sachdev spent some time helping other students on an online tutoring site and even made some money doing it.

However, Ajay realized that not everyone can afford private lessons. So he collaborated with two classmates and  created a new and FREE tutoring website. Specifically designed to help those who were struggling with remote learning.

The tutoring service is called Smartly. It allows users to send in questions about their homework and get emailed responses from one of the site’s 25 volunteer tutors at no cost.

This website gained a huge response among remote learning students. And the best part? There’s no shortage of students who want to volunteer as tutors.

Now with the new school year about to begin again, Ajay and his partners hope to be able to serve many more students, especially those who will begin the year learning from home. (NJ.com)
