{Katie’s Kitchen} Easy Homemade Pumpkin Spice Latte

7 Ingredients total in this easy and healthy recipe!  Start out with 1/2 cup of vanilla almond milk and 3 tbsp of Pumpkin Puree. Heat and stir for about 1min.

Pour mix into a separate bowl. Add in your spices & syrup (or sweetener) and blend until its frothy!

Pour into 8oz of your favorite coffee and sprinkle cinnamon on top….ENJOY! HAPPY FALL!

{Katie’s Baby Blog} My (ALMOST) 2 Year Old!

I can’t believe how big Lily is now!! She will be 22 months tomorrow and it’s crazy how much she has grown and learned in the past couple months.

Shes a BIG talker…to the point where everyone is shocked when they hear how much she is saying already ( I wonder where she gets that 😉 ) She knows her ABC’s and can count to 10, and is keeping us busy and running around all day!

Thomas Rhett & Carrie Underwood TIE for Entertainer of the Year at the ACM Awards!

Much like the entirety of 2020, Wednesday night’s ACM Awards looked a little different this year. Due to the ongoing coronavirus pandemic, there was no ambient noise or applause from a live audience and performances came from three different venues — the Grand Ole Opry House, the Ryman Auditorium and the Bluebird Cafe.

For the first time in ACM history, there was a tie for Entertainer of the Year with Thomas Rhett and Carrie Underwood sharing the honor. Thomas also took Video of the Year prior to the telecast for “Remember You Young.”

The night’s other big winners were Luke Combs and Old Dominion, who each scored two awards.

Host Keith Urban kicked off the show with a bang. All five of the Entertainer of the Year performers sang an abbreviated version of an early hit in medley style.

Carrie Underwood celebrated the 95th anniversary of the Grand Ole Opry by performing a medley of classic hits from some of the queens of the Opry, including Patsy ClineLoretta LynnBarbara MandrellDolly PartonReba McEntire and Martina McBride.

Runaway June recognized the ACM’s life changing “Lifting Lives” program, while Luke Combs shared the great work that Ford is doing with “Guitars for Vets” for veterans coping with PTSD.

As closing credits rolled, Willie Nelson’s “On the Road Again” played as a homage to better days ahead.

{Katie’s Kitchen} Bacon & Pineapple Jalapeno Poppers

These are the perfect appetizer to eat all for yourself or share with others! We love these!

For a small party- I used 8 jalapenos. Slice each one in half and remove the seeds. Side note- I always use gloved when removing the seeds!!

Take a small spoonful of cream cheese and spread inside the jalapeno. Get fresh pineapple and slice into small pieces, you can also use crushed pineapple, then add to the top of the cream cheese.

Next, take your uncooked bacon and cut in half, if it is a longer slice (you don’t want to wrap the bacon around the jalapeno more than once), then wrap your bacon around the entire jalapeno and lay flat on a baking sheet.

Cook the jalapenos at 400 degrees for 15 minutes (or until the bacon is crispy enough).

ENJOY!
