{Katie’s Kitchen} Summer Garden Veggie Saute

Grab anything and everything from your garden or pick up local veggies for this recipe! If you need the perfect side dish for your grilled chicken, burgers, dogs, etc. this recipe will go along great.

I used squash, zucchini, a purple pepper and Roma tomatoes from my garden (cherry tomatoes work well, too)!

Start out by chopping everything up so it will all fit nicely in a large skillet.

Add olive oil to your skillet on the stove top on medium-high heat. Add your squash and zucchini and cook for 3 mins. Add in the garlic and tomatoes and continue to cook, stirring occasionally, until vegetables are tender.

Season with salt, pepper, red pepper (if you like), then sprinkle with Parmesan cheese.

**You can also finish with a basil or raspberry vinaigrette for extra delicious flavor.

  •  1 1/2 tablespoons olive oil
  •  1 large yellow squash chopped
  •  1 large zucchini chopped
  •  3 cloves garlic chopped
  •  1 cup grape tomatoes (I used Roma’s seeded)
  •  Kosher salt to taste
  •  Dash crushed red pepper
  •  2 tablespoons shredded Parmesan cheese optional
  •  Basil vinaigrette for drizzling, optional
