Anything with rotisserie chicken is a win for me. To prepare, shred your rotisserie chicken.
Then, in a pan on the stove, add 2 cups of your favorite salsa, 2 tbsp. of tomato paste, 1/2 tsp. of coriander, 1 tsp. of chili powder and 1 tsp. ground cumin. Let that simmer for a few minutes and then add in your chicken and simmer for 5 minutes longer.
In the oven, (350 degrees) sprinkle cheese on your tortillas and heat in the oven until cheese melts.
While everything is cooking, chop up your lettuce, avocado, and black olives.
Once, your chicken is finished spoon it onto your tortillas and add your favorite toppings.
