{Katie’s Kitchen} Salmon Patties

Salmon patties have always felt like home to me. It’s something that my mom has made us since before I can remember and we always have them with a side of mac& cheese and stewed tomatoes.

Overall these are easy! A 20 minute meal. Cleaning the salmon is going to be the most time consuming part. I always use 2 cans of red salmon that you can get from any grocery store.

Take out the salmon and pull apart the salmon as it naturally falls and then go through and scrape out the bones that are in the middle. Then I just gently check through the salmon for little bones as I put it into a separate bowl.

This isn’t as scary as it sounds because if you just pull apart the salmon you can see where in the middle there is a line of bones and then you just scrape them out.

Then, the easy part!

Now that you have all of the salmon in a mixing bowl…add a half cup of bread crumbs, 2 tbsp. of mayonnaise or miracle whip, 1/2 tbsp. of Old Bay Seasoning (or more to taste), handful of chopped spring onions, and 2 eggs, and a 1/2 tsp. of lemon juice. Mix it all together!

Then form your patties! Form 6-8 patties with your hands and place aside.

Drizzle 2 tablespoons of olive oil in a non-stick pan (The Kitchenette has great options!) and gently place your patties in the pan. I like my patties a little more brown on the sides, but 2-3 minutes and golden brown is all you need, flip so they are brown on both sides.

Once they’re done, sit aside and sprinkle a little course salt and squeeze of lemon on top.

-1/2 cup of bread crumbs

-2 tbsp. of mayonnaise

-1/2 tbsp. Old Bay Seasoning

-2 eggs

-1/2 tsp. lemon juice

-1/2 cup chopped spring onions
