{Katie’s Kitchen} Crock Pot Zuppa Toscana Soup

Where are my Olive garden soup lovers?! I fell in love with this soup from The OG years ago and was so excited to find this mock recipe that taste just like their Zuppa Toscana soup!….and it’s super easy.

Only 7 ingredients to make this soup! You can make it spicy or not hot at all.

I started out browning my ground sausage (I used jimmy dean regular) and then added minced garlic to the sausage to cook.

Once that is finished, add it all to the bottom of your crock pot.

To make things SUPER easy, I used a bag of Simply Potatoes diced with onions and tossed that on top of the sausage in the pot. You can always get russet potatoes and clean, peel and dice them yourself, but using the bag made everything so much easier and less messy!

Next, pour in 32 oz of chicken stock over everything (I used no salt added chicken stock). Make sure if covers everything, if not, add some water.

Let that cook on high for 4 hours.

Before serving, mix a cup of heavy cream and 2 tbsp. of flour together with a whisk and pour into the crock pot. Then, take a handful of kale and pull it apart into smaller pieces and toss into the soup.

Cook for 30 more minutes, add salt and pepper to taste and if you want red pepper flakes to give it more spice.

That’s it, and it is so so delicious, especially if you have bread to dip in on the side!

  • 1 lb ground Italian sausage (Hot or milk)
  • 1 bag Simply Potatoes diced potatoes and onions (can substitute with 1 diced yellow onion and 4 russet potatoes, peeled and cubed)
  • 2 cloves minced garlic
  • 32 oz chicken stock (Salted or unsalted)
  • 1/2 bunch kale (a handful) de-stemmed and torn into bite sized pieces
  • 1 cup heavy cream
  • 2 Tbsp flour
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
