Let’s get healthy with this delicious tomato vegetable soup!
I got this recipe from my sister-in-law who, got it from a friend! I love sharing delicious recipes and everyone in the family has fallen in love with this easy toss in the pot, last all week, soup.
Perfect for this time of the year when you’re looking for something that’s easy to make and then you can eat it all week long…and it’s healthy!!
You’re going to peel and cube a sweet potato, chop a carrot, and chop a white onion. Then, add in vegetable juice, 32 oz. less sodium beef broth, can of whole green beans and a bag of frozen soup mix vegetables. That’s it! Bring it to a boil and then simmer until the vegetables are tender with a fork.
We did add a slice of bread on the side for dipping (not for health reasons) 😉
Ingredients:
-Tomato Juice (64 oz)
-Less Sodium Beef Broth (32 oz.)
-1 can whole green beans
-1 onion (white/ yellow chopped)
-1 sweet potato, peeled and diced
-1 bag of frozen soup mix vegetables
-add in any other vegetables that you want!! I threw in an extra carrot.
