{Katie’s Kitchen} Chicken and Dumplings!!

Mmmmmm!!! It’s frigid cold, but this dish will warm you right up, straight out of the crock pot. It cooks all day long while you’re busy doing other things and only takes a little bit of prep. Definitely the “cheat” version of chicken and dumplings….but who doesn’t like that?!

Start out by grabbing your crock pot and putting it on high. Toss in a whole chopped onion and then add your 4 boneless skinless chicken breasts on top.

Next, in a mixing bowl, add a can of condensed cream of chicken soup, and a can of cream of celery soup. Then come all the spices, poultry seasoning, peppet, and parsley. Mix that all up together and spread on top of the chicken in the crock pot. Then, just pour in 2 cups of chicken broth over it all. Let that cook for 4 hours on high.

After 4 hours…chop up carrots, and grab your bag of defrosted peas and add them into the crock pot.

Then comes the fun part! pop open your can of biscuits (I used home style), and take all 8 and roll them out flat. Cut them into 4 strips each. Once you have your pile of biscuit strips, layer them on top of everything in the crock pot.

Mine only took about 40 minutes to cook, depending on the crock pot, it could be more like 60 mins.

Then, scoop out the chicken breasts and slightly shred the chicken (it will pretty much just fall apart), add the chicken back to the crock pot, and it will help break up the dumplings. Let it all cook for another 10 minutes and its done!

Take a BIG spoon and grab a bowl and get ready for deliciousness. I did think it needed a little salt added and I like a little pepper on top. We loved it, especially on a cold evening 🙂

  • 1 large onion , diced
  • 1 can (10.5 oz) cream of celery soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tablespoon fresh parsley
  • 1 teaspoon poultry seasoning
  • black pepper to taste
  • 4 skinless boneless chicken breasts
  • 2 cups low sodium chicken broth
  • 2 cups frozen vegetables or peas and carrots , defrosted
  • 1 can (8 pieces) refrigerated biscuits
