Okay, guys! This dinner was sooo good!
We’re calling it the One Pan Low Country Sausage and Shrimp Dinner! Delicious butter, garlic, parsley, cayenne pepper, and oregano help bring this dish to life!!
Tim and I have plenty left over and I can’t wait to eat more for lunch, too! Tim said it was “the best!” which is HUGE because he never says that!
A good amount of chopping, and time cooking is put into this meal because the potato do need to cook longer than everything else.

I started out with all of my ingredients (see below) preparing and chopping up the veggies, then making the marinade butter sauce… whatever you want to call it!
First, you’re going to want to pre-heat the oven and start cooking the potatoes. So, toss those in 2 tbsp. of the buttery herb mix (see below, mix all ingredients together) and then throw on a pan that has been lightly sprayed with cooking spray and put into the over for 15 mins.
While that’s cooking, toss the shrimp in the buttery herb mix 2 tbsp. and let them marinate.
Finish cutting your veggies, slice the sausage (I used smoked Andouille). Once the potatoes are done their first round, push them to the side and toss the veggies and sausage in the rest of the buttery herb mix and put in the oven for another 15-20 mins.
After that is finished, put the shrimp on top of everything and sprinkle a little parm cheese. Let that cook for 14 mins.
Finally, it’s done…almost! As soon as it comes out of the oven grab your drained corn and toss with everything.
Now it’s ready to eat and SUPER delicious!!! You could put it over rice, we didn’t need it, but that would be delicious, too.
Ingredients:
-Sausage (I used smoke andouille) coined.
-1 pound baby red potatoes (quartered)
-1 pound large shrimp peeled and deveined
-1 or 2 bell peppers
-1 yellow onion
-1 can of corn (drained)
Buttery Herb Mix:
-4 tbsp. melted butter
-1 tbsp. dried parsley
-1tbsp. dried oregano
-1/2 tsp. garlic powder
-1/2 tsp. salt
