My Crazy Week!

Let’s Precap this week!

Testing out my new glasses while getting super excited about this week! Tri-County Pump Service is teaming up with my nightly trivia! Each month we will be featuring a HOT SPOT during trivia and playing along gives you a chance to win a gift card. December is all about The Main Cup.

I interviewed Children of Incarcerated Parents Partnership (COIPP) for the podcast. This week will also feature interviews with Marine Toys for Tots Foundation and Frederick Memorial Hospital! Make sure to follow the podcast on iTunes – https://goo.gl/NJee2t

I am also not sleeping this week! I will be shadowing/producing the Free Country Wake Up Crew on 99.9 WFRE! Tuesday and Wednesday with Tom & Katie sound great to me. I will be covering for Tom next week while he is traveling. I will be sleeping for lunch or something.

Friday/Saturday is all about the YMCA of Frederick County Santa Run! Friday night 5p to 7p at the YMCA for a live broadcast. Saturday is the 5K!

I am so excited about this week! I can’t wait to see the surprises I don’t know about! Have fun.

Interesting People #28: Shari Ostrow Scher of COIPP

COIPP was name dropped a few times on the podcast. I now know that it stands for The Children of Incarcerated Parents Partnership. I have also had the fantastic opportunity speak with their President and Founder, Shari Ostrow Scher.

We didn’t just talk acronyms! This podcast is all about the challenges of bringing COIPP’s mission to life and how incarceration has changed over the years. We cover an equal of sad facts and inspiring stories. COIPP is an organization that works to bring kindness to a terrible life-changing experience.

Shari also shares her story of why she started COIPP and helped correct some of my misconceptions about this issue.

Saying goodbye to the stache

I guess this video has time travel maybe. Time travel is the only way I could truly celebrate my 30 days with a mustache. There are also flashbacks in black and white. Can this win an Emmy?

Thanks for the fun.

{Katie’s Kitchen} Holiday Cookies- “Mexican Wedding Cookies”

Also, known as Russian Tea Cookies (same thing), these cookies are delicious and perfect to prepare for the holidays!

A great gift for friends or something to bring to a holiday party, Mexican Wedding Cookies are so easy to make! There are a few steps that do take some extra love and care to make them come out perfectly, but they will still work 😉

Start out heating your oven to 350 degrees.

Take 1 cup of softened butter (not melted) and mix with your 1/2 tsp of almond extract and 1/2 vanilla extract and 1/2 cup of powdered sugar. Whip with whisk until fluffy.

Gradually add in 2 cups of flour (I used all purpose flour), then start mixing in 1 cup of pecans (chopped very small).

Once everything is mixed, roll them into walnut sized balls and place on a cookie sheet. Put into the oven for 12-14 mins, or until the bottoms are a light brown color.

Once done, take out and place on a cooling rack before adding powdered sugar. You want the cookies to cool almost completely before you start rolling them in the powdered sugar or it will become a glaze and a mess!

Once they’re done…try not to eat them all! It was hard! A few of mine ended up being a little larger than walnut size, Tim helped me roll them and wanted “bigger” cookies 😉 He’s not a huge ‘nut person’ but he still loved these and was a little sad when I said I was taking them into work to share….I left him one on the counter 🙂

Do you have a different version of this recipe!? Tell me about it!!

Check out pictures of the steps of my cookies below!

I got the recipe here!
