{Katie’s Kitchen} Healthy Chicken and Veggie Detox Soup!

If you like a little southwest flavor to your soup, you’ll love this!

Healthy low-fat, low-carb, gluten-free soup, and it packs a punch!

What a better way to head into the New Year and a busy weekend than with a delicious detox to get you feeling your best!

Super healthy with a little spice and lot of flavor! All of the ingredients will aid in helping to boost your immune system and provide you with ingredients to release toxins. Cabbage, broccoli, avocado, garlic and turmeric… All detoxifying ingredients.

A lot of times when you hear ‘detox’ anything you think, ‘a lot of vegetables and very bland’, but this soup was anything but! The spices gave it a serious boost of flavor and adding avocado on top just made every bite that much better.

Grab your biggest pot (I used my dutch oven) and heat it up to medium, add in olive oil and then toss in diced onion and garlic and letting that sizzle for 5 minutes. Toss in 2 big pieces of boneless, skinless chicken breast. Over top of all of that, go ahead and pour in the green chilies, red roasted diced tomatoes, chicken broth (3 quarts- I used all reduced sodium or no salt chicken broth), chopped carrots and all of the spices (Ingredients below).

Bring that to a boil and then lower the hear and simmer for about 20 mins.

Once the chicken is cooked through, scoop it out and sit aside.

Then, add in the chopped cabbage and broccoli. Next, shred the chicken and toss it back in the pot.

Simmer until the broccoli is soft and add salt and pepper to taste! Dice up some avocado and throw that on top for added yummyness!

That’s it!

My husband and I loveeddddd it! We were surprised by the spiciness and i’m glad I only used one can of the green chilies. It called for 3 4oz cans, I only used one and that was plenty!! There is red pepper flakes added and that made it spicy too.

If you like spice, then use one can of green chilies and the called for red pepper flakes like I did…If you LOVE spice then go ahead and do it up!

Ingredients: I got the recipe here! 

  • 2 boneless skinless chicken breasts
  • 1 large onion, peeled and chopped
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 3 – 4.5 ounce cans Chopped Green Chiles (I only used 1 can)
  • 14.5 ounce can “fire roasted” crushed tomatoes
  • 3 quarts chicken stock (reduced sodium or no salt)
  • 1 tablespoon ground cumin
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoons turmeric
  • 2 1/2 cups sliced carrots
  • 4 cups chopped cabbage
  • 3 cups small broccoli florets
  • 2 avocados, peeled and diced
  • Salt and pepper

Perfect for a cold winter night!!! Yumm!

{Good News} Deer LOVE Peanut Butter

DEER LIKE PEANUT BUTTER TOO

A couple weeks ago, a mother deer wandered into a Stout, Colorado, convenience store. According to store employee Lori Jones, the deer was calm, and “she was looking at the sunglasses and the chips.”

Jones took a few photos of the deer and then lured her outside with a peanut butter bar.

She thought that was the end of it and went back to work checking the store’s stock. A half hour later the doe was back … this time, with three of her family members.

“They were just looking in the doorway like, ‘Can we come in too?’ I said, ‘No,'” said Jones, who lured the herd away with another peanut butter bar. But this time she clapped so they would scatter. “It was so funny,” she said.

Apparently, no one can resist a peanut butter bar. (Sunny Skyz)

{Tom’s Take} BEST Horror Movies of 2017!

Right off the bat, Alien: Covenant and Life are two great movies, but they are sci-fi flicks.

  • It Comes at Night- It’s classified as a horror movie, but just like Walking Dead, it’s the evil that men do to one another, no monsters or anything.
  • Annabelle: Creation- Part of the Conjuring series. These are getting better than the earlier movies.  It has some plot problems, but truly disturbing visuals on the screen.

Get Out- After seeing it twice, this is my favorite out of all of the above. Not because of horror or gore, but because of a wildly imaginative idea for a horror film, which many American horror movies are lacking.

  • Jeepers Creepers 3- Loved it. The scare crow comes alive every 23 years and eats all the snotty kids. Keep ’em coming!
  • IT- Ain’t seen it yet. But it looks good and has great reviews. Comes out of DVD January 9th.

{Katie’s Kitchen} Cranberry Feta Pinwheels for Christmas!

You know I love my pinwheels- and this is where it all started!!!

I made these a couple of years ago for a Christmas party and people were begging for more and the recipe, and I laughed a little because you just throw these together and in 10 mins. they’re done and look beautiful on a holiday plate.

Here’s the ingredients: Cream cheese, Feta cheese, green onions, Crasins Dried Cranberries, and large flour tortilla wraps (I used green spinach wraps to be festive)

  • 3/4 cup dried sweetened cranberries
  • 1 (8 oz) package cream cheese, room temperature
  • 3/4 cup crumbled feta cheese
  • 1 ⁄4 cup chopped green onion
  • 2 large flour tortillas

Mix all the ingredients into a mixing bowl (it really helps if the cream cheese is soft) then take a spreading knife and spread a layer of the mixture over the tortilla. Roll the tortilla up as tight as you can and then slice into pieces (about 12). Turn on their side and you can position these into a Christmas tree, too!

Superrrrrr easy and fun and everyone loves them!! YUM!

{Tom’s Take} My Favorite Christmas Movie

 

A movie that takes place during Christmas, Love Actually, features different stories all happening throughout the movie.  The scene when Alan Rickman is buying a necklace for his mistress while shopping with his wife, Emma Thompson, and Mr. Bean takes his time wrapping it while Alan Rickman does a slow burn is priceless.

Then, he gives her a Joanie Mitchell CD after his wife found the necklace and thinks its hers…that’s when she knows, while playing the CD and listening to “Both Sides Now”, it’s heartbreaking. Life doesn’t always have a happy ending. She stays with him, too.

Personally, at the end, when it shows everyone meeting at the airport with the Beach Boys “God Only Knows” on the soundtrack, hits home with me, because of all the emotional greetings and goodbyes at airports.

Elf rocks, too.
