{Katie’s Kitchen} Overnight French Toast Bake

Brought to you by Catoctin Mountain Orchard

This was a fun recipe to bake! I love french toast and the thought of cinnamon and baked pecans on top made my mouth immediately water!

I had friends coming into town early in the morning over the weekend and knew this was a great opportunity to make this recipe and because I wanted them to walk into the house and smell the sweet goodness of french toast 😉

I started off this recipe with a large loaf of fresh Italian bread sliced into 10 slices. Then cut into one inch pieces– toss that into your 9×13 in. baking dish. You’re going to need two mixing bowls- one for the dry topping and one for the eggs and milk, etc.

For the topping –combine brown sugar, flour, cinnamon and salt in a bowl and stir all together. Cut butter into small cubes and add to dry ingredients. Mash in with a fork (don’t worry about this too much, it’ll ball up and just be little pieces). Stir in chopped pecans. Cover and place in fridge.

Then, in your other mixing bowl, whisk together milk, eggs, vanilla, sugar, and cinnamon. Pour over bread in the casserole dish. Cover and chill overnight.

The next morning preheat your oven to 350 degrees. Uncover the topping bowl and your prepared baking dish from the fridge. Sprinkle topping over the bread mixture and bake uncovered for 35-45 minutes until golden and bread is baked through.

Then, top with maple syrup or powdered sugar!! Yum!

Ingredients: I got the recipe here!

Ingredients

  • 10 slices texas toast-style white bread
  •  2 cups milk (I used almond milk and it still worked perfectly fine!)
  • 6 eggs
  • 1 1/2 teaspoons vanilla extract
  • 3 tablespoons sugar
  • 2 teaspoons ground cinnamon

Topping

  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 4 tablespoons butter, chilled
  • 1/2 cup chopped pecans

{Katie’s Kitchen} Crock Pot Stuffed Pepper Soup

Brought to you by Catoctin Mountain Orchard

One of my favorite soups! I have made this a few times before, trying out different recipes each time and this one was my favorite. Always so comforting and delicious– especially on a rainy day, like we’ve been having quite often this summer.

This recipe is also great to save and put in containers to eat later!

Start by browning your ground beef and cooking your onions in a skillet on the stove top over medium heat. Drain the beef and onions and then put them in your crock pot. Then you’re going to add the rest of your ingredients!n One can diced tomatoes with the juice,2 cups of green and red peppers chopped, 3 cups of beef broth, dried basil, dried oregano, and 1 cup of cooked rice. You can use white or brown rice. Cover and cook on low for 6 hours.

You do want to watch it and make sure it isn’t getting to thick from the rice soaking up all the juice. You might even want to add the rice towards the end!

That’s it! An easy meal to toss into the crock pot and let cook all day with little prep.

Ingredients:

  • 1 lb extra-lean ground beef
  • 1 c onion diced
  • 14-1/2 oz can Red Gold diced tomatoes with Roasted Garlic and Onions
  • 2 c green peppers and/or red peppers chopped
  • 15 oz can Red Gold tomato sauce
  • 3 c beef broth
  • 1/2 t dried basil
  • 1/2 t dried oregano
  • 1 c cooked rice
