Baby Girl Update!!

The weeks are flying by as we head into week 34 with baby girl!

We are counting down the days and can’t wait for November to get here. I am loving all the sweet and sometimes very hard kicks in the belly; she is definitely a wiggly little girl. Maybe my little high kicking cheerleader, like me?? We will see 😉

My 32 week appointment at Capitol Women’s Care was fun seeing baby girl for our last sonogram before she arrives! I can’t believe she already weighs 4 lbs 9 oz and she looked so snuggly the entire appointment.

Now is the time where we start to check final things off the list…

First up this week….the hospital tour! My husband and I toured the hospital earlier this week and definitely got a lot of great information about what happens and where we need to go on the delivery date! I definitely recommend doing the hospital tour to see how everything works!

Also, easy to check off the list was choosing a pediatrician! Done! Recommendations from family and friends helped with this one.

Next to think about…what to pack in the hospital bag! There are way too many lists that people share…so please let me know what your essential items were!! It looks like chapstick, a comfy robe, soft outfits and warm socks are at the top of most lists. So we will start thinking about putting our bag together in the next two weeks!

{Katie’s Kitchen} My Favorite Enchaladas!

One of my favorite recipes (of course my Mom’s recipe:)) for when i’m craving enchiladas, and I definitely have been lately!

The best part, it’s super easy to make. Pre-heat your oven to 375 degrees. You can either cook chicken breasts for 30 mins. topped with olive oil and chili powder (or grab a rotisserie chicken from your favorite grocery store)…and shred the chicken into a mixing bowl. I used an entire rotisserie chicken for this recipe.

Toss in a small can of chopped green chilies, 1/2 cup sour cream, a can (or as much as you like) of black beans (drained), a cup of Mexican cheese, 1/2 tsp. of ground cumin and 1/2 tsp. of ground coriander. Then, take 1/4 cup of the red enchilada sauce and pour into the bowl on top of everything and mix it all up!!

Next, pour some of your enchilada sauce (about 1/4 cup) into the bottom of a glass baking dish. Then, Grab your large soft tortillas and a spoon and scoop your chicken mixture into about 10 tortillas. Folding in one of the ends and placing the enchilada, seam sides down, into your baking dish. Top with additional enchilada sauce and chopped spring onions.

Cover with foil and bake at 375 for 45 minutes. Remove from the oven and take off the foil, then top with additional shredded cheese and bake for an additional 10 minutes.

Serve with sour cream on top!

Ingredients:

-4 chicken breasts (or rotisserie chicken)

-small can chopped green chilies

-1/2 tsp. of coriander

-1/2 tsp. of cumin

-large can of enchilada sauce

-1 cup of shredded cheese

-large flour tortillas

-sour cream

Heroin’s Grip is a documentary film in production that will tell the story of the heroin epidemic in Maryland, focusing in on Frederick County. We are interviewing current addicts, healthcare and mental health workers, officials from the law enforcement community, as well as families whose lives have been shattered by heroin and opioid addiction. We want the community to help tell this story in order to get a better understanding of the impact it’s having on our region. Our goal is to produce a film that will be seen worldwide, and be used as a teaching tool to rally the community to help solve this epidemic!

The heroin problem in the United States has reached epidemic proportions, and the issue has been addressed in a variety of films and news stories, but these broad-scoped stories at times belie the reality of what’s happening to individuals and families right here in our local community.

“The heroin and opioid epidemic has devastated hundreds of families, individuals, and businesses all across our county. We see it in the news nearly every day and it’s easy to think that it’s someone else’s problem. We think that it’s a Frederick or Baltimore issue. It’s not! It’s in our neighborhoods. My neighborhood. My small town. It’s our community’s problem, and we must work together to solve it. I couldn’t simply stand by and watch, I had to get involved. That’s why I’m making this film,” – Conrad Weaver

Filming began in early February 2017 and will continue through the 2018 spring months. We hope to complete production by early September in order to submit the project to a number of major film festivals around the country. We also plan on releasing a DVD version along with educational materials related to the film sometime in 2019. We feel it’s important to provide a resource for teachers, healthcare workers, mental health clinics, and others to be able to share the story and educate the public about this epidemic.
