{Katie’s Kitchen} The BEST Baked Mac & Cheese

I took this recipe to my family’s Easter party and everyone loved it and went back for seconds! I even doubled the recipe. Don’t be shocked at the amount of cheese that goes into this recipe…it’s totally worth it.

Start out – Preheat oven to 350F. Lightly grease a large 3 qt or 4 qt baking dish and set aside.Combine shredded cheeses in a large bowl and set aside.

Then, cook your pasta. I used jumbo elbow noodles. Cook about one minute shy of al dente according to the package instructions. Drain, and place in a large bowl.

Drizzle pasta with olive oil and stir to coat pasta. Set aside to cool while preparing cheese sauce.

Melt butter in a deep dutch oven or pot. Then, Whisk in flour over medium heat and continue whisking for about 1 minute until bubbly and golden.  Gradually whisk in the milk and heavy cream until nice and smooth. Continue whisking until you see bubbles on the surface and then continue cooking and whisking for another 2 minutes. Add in salt and pepper.

Now…here comes the cheese!!! Add two cups of shredded cheese and whisk until smooth. Add another two cups of shredded cheese and continue whisking until creamy and smooth. Sauce should be nice and thick.  Stir in the cooled pasta until combined and pasta is fully coated with the cheese sauce.  Pour half of the mac and cheese into the prepared baking dish. Top with remaining 2 cups of shredded cheese and then the remaining mac and cheese.

In a small bowl, combine panko crumbs, Parmesan cheese, melted butter and paprika. Sprinkle over the top and bake until bubbly and golden brown, about 30 minutes. Serve hot and enjoy.

note: I did substitute cheeses and used what I had in the fridge- cheddar, mozzarella, pepper jack.

  • 16 oz elbow macaroni, cooked (or other tubular pasta)
  • 1 tbsp extra virgin olive oil
  • 6 tbsp unsalted butter
  • 1/3 cup all purpose flour
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • 4 cups sharp cheddar cheese shredded
  • 2 cups Gruyere cheese shredded
  • salt and pepper to taste
  • 1 1/2 cups panko crumbs
  • 4 tbsp butter melted
  • 1/2 cup Parmesan cheese shredded
  • 1/4 tsp smoked paprika (or regular paprika)

Seems like every single week there’s a new country music baby comin’ around. Whether a country star just had their baby or they are due this year…Let’s make a full list shall we? Honestly, by the time I post this I bet you another country music couple will announce they’re pregnant. See my most up to date list below in no particular order!

First up, Carrie Underwood and Mike Fisher kicked off the year of 2019 with another baby boy named Jacob Bryan following his now big brother Isaiah.

Jason Aldean and his wife Brittany Aldean welcomed Navy Rome into the world on Monday, February 4th. She also has a big brother, Memphis who has completely swooned the Instagram world.

Tyler Hubbard (Florida Georgia Line) and his wife Hayley Hubbard also announced their soon to be baby boy due mid August. Hayley showed off her growing baby bump at the Billboard Music Awards this week. This will be their second child together after having Olivia. Hayley posted the sweetest video of Olivia spotting her, “Dada,” on the TV at the award show. Check it out:

Kane Brown and his wife Katelyn Brown just finished celebrating being newly weds, which then lead to a baby announcement! Well phew, didn’t that happen quick. Initially, Katelyn wanted to wait until she was closer to 30 to start having children but the universe works in mysterious ways and they couldn’t be happier. Kane fully supported her wanting to wait but is over the moon excited about being a Dad. They revealed the gender of the soon to be baby girl at the Billboard Music Awards. KB2 will soon become KB3.

Brantley Gilbert and his wife Amber will be welcoming a baby girl this September! Little Barrett Gilbert is going to be a big brother. After struggling to conceive for two years they were blessed with Barrett and both were convinced their second child would be a boy as well. Well, surprise! Brantley now admits that he’s absolutely terrified.

Jake Owen and girlfriend Erica Hartlein announced their pregnancy this passed Thanksgiving 2018, due in early May…..OH WAIT the baby was born 3 days ago….April 29th, named Paris Hartley Owen. Jake Owen’s first baby girl six-year-old Pearl, is so excited to be a big sister.

Dylan Scott and wife Blair are expecting their second (surprise) baby girl in September as well. So who knows, maybe their baby and Brantley Gilbert’s baby can be friends? They also already have a one-year-old son named Beckett.  Dylan was touring when Blair called and said, “Hey, I want to have another kid.” Dylan answered, “I think you’re crazy, Beckett’s not even one year old yet.” Lastly Blair replied, “Well, it happened already.” Leave it to them to keep romance alive!

Lastly, but certainly not least…the Stapletons. Chris and Morgane Stapleton a.k.a. the baby gods. Chris: winner of what feels like a million ACMs and soon to be father of five. Baby number five is due any minute now it seems. They are not going to find out the sex of the baby. They want to be surprised. Morgane had their twins and seven months later Chris made the announcement that she was pregnant again in November 2018. Chris is a very private person especially when it comes to their kids, which anyone can respect. So you won’t be seeing pictures of them on social media. Baby bump showing at the ACMs:

{Katie’s Baby Blog} Our First Weekend Away

This past weekend we had a wedding in Jacksonville, FL and we had so much fun!

I was a little stressed as the weekend was approaching knowing that it was our first weekend away from our baby, the longest we’ve been away from her. Even though it was my mom watching her and I knew she was going to be totally fine! I knew I would miss her….a lot. I even questioned if we should be going or not, but tickets were purchased and the house was paid for…so we were all in.

We packed her bag and double checked she had everything, which is A LOT, and took her over to my parents house to drop her off for the weekend. I was fine. I went through all of her things with my mom, who probably thought I was crazy, and told her what to do every minute of the day. Side note- my mom does daycare and has been watching babies for almost 30 years…and she watches Lily all the time. BUT, I HAD to say it anyway haha. #NewMom.

It was right before we left that I teared up a little. I don’t even know why. I think it was a little anxiety, that I wouldn’t be close to her, or that she would miss me and wonder where we were, or maybe that she would do something cute or new and I would miss it. So I kissed her 100 times and then Tim pushed me out the door and reminded me that she would be fine.

Once we got to the airport and got busy with going through security, I was fine. I was even excited at that point that we were going somewhere warm AND that I could sleep in the next day and just relax. It has been five months since we had her and sleeping in sounded AMAZING.

Of course, I text my parents all weekend wondering what she was doing. My Mom also sent me pictures of the fun things that Lily was doing and face-timed with us, which made me feel even better.

It felt great to just chill and hangout with my husband on our weekend date once I let go and realized I knew she was in great hands and there was no use in worrying about her.

We had a blast and ate great food, stayed out late, went to our friends wedding, and caught up with good friends.

I’m so glad we went. I know I said a couple times that I wasn’t sure if I was ready to leave her for an entire weekend yet, but I think it was the right time.

She has a great weekend, too! I’m not even sure if she missed us!

I know when we got to the house to pick her up she was excited… she smiled so big and reached her arms out for us, and of course I held her the rest of the day 🙂

Now, I totally think it’s good to get away and have some “me”/ “couple” time whenever you get the chance. It give you time to re-set and get some sleep…which is needed!!
