STRAY DOG JOINS POLICE FORCE, BECOMES EXCELLENT K-9 OFFICER

In an effort to keep things as predictable as possible, most police departments get their K-9 dogs from special breeders. Which makes sense right? But why not try something different and change the life of a rescue pup instead?

In Round Rock, Texas, the K-9 team turned to a local animal shelter and found a stray named Harley they thought would fit right in and become a great officer.

They were right. Not only did Harley learn everything he needed to help his fellow officers, he retired as a candidate for a national award.

In his five years on the force, Harley saw a lot of action. He tracked down drugs and evidence. He rode a helicopter to search for missing people during a flood.

And now, he’s one of 10 finalists for a Hero Dog Award from the group American Humane. If he wins, Harley will enjoy a red-carpet reception in Hollywood – which is a long way away from the shelter he called home just five years ago.

Okay, we can all admit that this new Blake Shelton song is a true game changer. It screams soul and rock & roll. You can’t NOT like it. Then to release this music video to go along with it? Groundbreaking. It’s just gives you goosebumps and really takes your mind back to your hometown. It’s all about giving back to the land you grew up on. Safe to say, I think we’re all impressed. {Katie’s Kitchen} Quinoa Stuffed Peppers

I am a huge fan of stuffed peppers and with this recipe you can make everything in one pan before warming in the oven. I used ground sausage for this recipe; you could also use ground turkey.

Pre-heat the oven to 400 degrees. Cut the top off your peppers (I used 4) and place into a dutch oven.

Start by using a large pan, heat olive oil over medium heat and cook onions until soft. Add minced garlic and cook about 1 minute. Add ground sausage and cook until the sausage is browned. Then, drain grease.

Add black beans, tomatoes, oregano and salt and pepper. Add uncooked quinoa and chicken stock to the pot and stir well. Allow the mixture to cook together until the quinoa is completely cooked– about 20 minutes. Your mixture will be thick but juicy.

Scoop the sausage quinoa mixture and pour it into the hollow peppers, making sure to fill the peppers completely but allowing the mixture and juice to spill over the sides. Once all peppers are filled, pour remaining juice into the bottom of your pan or Dutch Oven. Put the pan into the pre-heated oven and cook for approximately 30 minutes or until the peppers are tender.

Once finished, pull the cooked peppers from the oven and top with grated cheese and cook for an additional 5 minutes. Enjoy!

Ingredients – I got the recipe here! 
  • 2 tbsp olive oil, or enough to coat the bottom of your pan
  • 4 red bell pepper, halved and seeded
  • 1 onion, diced
  • 3 cloves garlic, finely chopped
  • 1 lb loose sausage/ ground turkey
  • 1 can can of Black Beans
  • 3-4 cups tomatoes, roasted and peeled or substitute canned diced tomatoes
  • 1 cup quinoa
  • 2 cups chicken or vegetable stock
  • salt and pepper to taste
  • 4 tbsp fresh parsley for garnishing
  • 1 cup Gruyere cheese (or your favorite cheese), grated
