Hotels.com is hiring a “Poolhop.” This lucky person will  travel all across the country, researching the most epic hotel pools. Here’s how the company describes the job: “The job is simple: travel to six incredible hotel properties, sip on fruity drinks, snap some photos, report back to Hotels.com fans and lounge by each pool. Document the experience. Get paid.” Yes, get paid. The company is paying 10 grand for this summer dream job that will take you from Hawaii to New York. You must be 21 or older and be able to jet around the country for two weeks in August. You have till June 25th to apply. Click here to apply.

{Katie’s Baby Blog} Life With a 7 Month Old

I can’t believe how quickly time is passing. Lily is 7 months old TODAY! 6 months was a big deal, but now we are just inching closer to 1 year…and I can’t believe it.

I went through pictures of her the day she was born and compared them month to month and it’s crazy how much bigger she gets with each month that goes by, and how her looks have changed. Some months I think she looks more like me and others I really see my husband, Tim.

Her hair is coming in thick and we can officially get a little fountain pony tail on the top of her head…which is adorable. I still like bows though, so she’s not getting out of wearing those anytime soon.

She is wearing 9 month clothes right now and starting to grow out of those! 9 month outfits are probably what I have the most of ‘size-wise’ for her. I feel like I stocked up on 9 month outfits for summer, and now that she is already wearing them, i’m trying to change her outfit twice a day just to get her to wear everything before she grows out of them. So, I’m hoping she’s still wearing 9 months for the next month….I don’t have any 12 month clothes yet for her!

Right now, her favorite thing to do is sit on her play mat in her room and play with her toys on the floor; the jumper is a close second. I really thought she would like a new little cruiser/walker that we got, but she only likes it for about 10 minutes before she wants out.

She’s starting to want to crawl, actually….walk. No joke. This girl wants to be stood up and walked around the room as much as we will do it. But, she is diving onto her belly from the sitting position and making her way onto all fours to reach toys and play.

When it comes to food, she loves apple yo baby yogurt and the food pouches that you squeeze into their mouth. She’s still all about her veggies and loves sweet potatoes and carrots the most.

I think we are going to start testing out solid foods soon. I’ve been too nervous, so I wanted to wait until she turned 7 months. AND peanut butter and eggs; The doctor told us to try both in the next couple of months…so, we will get to that when I’m ready haha.

My sweet baby is getting so big!!

Brett Eldredge Celebrates Father’s Day with #1 Song and Dad on Stage

My heart is so full watching this performance by Brett Eldredge and his Dad. Brett celebrated his song, Love Someone hitting #1 in country music on Father’s Day. What better way to celebrate than combining the two? Check out his Instagram post and get chills when the crowd takes over. You can’t help but smile when Brett smiles…it’s contagious.

[Katie’s Kitchen} Spaghetti Squash Taco Bowls

Getting healthy is sometimes hard, but this spaghetti squash taco bowl makes it easy because it’s so yummy!

I love making spaghetti squash to replace your pasta, use as a side dish, or for tacos!

With a little one, I try to cook the spaghetti squash whenever I get a chance during the day. Just pre-heat the oven to 400 degrees and put the entire squash in the oven, don’t cut it in half or use olive oil…nothing. I promise this way always turns out better than cutting it in half, it’s not watery at all. Let it cook for 45 minutes.

Once it’s finished take it out and let it cool before cutting it in half.

With a fork scrape the seeds out and then scrape the sides to loosen the squash. Leave in the “bowl”

Taco Mix-  With a pound of ground beef or ground turkey, brown the meat and then cook with taco seasoning as normal.

Then, add a can of black beans (drained) and diced tomatoes (with some juice). I normally use fire roasted diced tomatoes, that’s even better!  You can also add drained corn. Cook together for 5 minutes.

Next, add your taco mix to the squash bowl and sprinkle a little cheese on top, put the bowls back into the oven for 10 minutes.

That’s it!! You can eat it right from the bowl and add your favorite toppings- avocado, sour cream (plain greek yogurt), etc!

Ingredients:

-Spaghetti Squash (not too small!)

-Taco seasoning

-1lb or ground beef or ground turkey

-I can of fire roasted diced tomatoes

-1 can of corn

-1 can of black beans

-Taco toppings: avocado, salsa, plain greek yogurt (or sour cream)

{Katie’s Baby Blog} Summer Fun!

Summer is here! We couldn’t wait to get in the pool with Lily and see how she liked it!

Her first pool day was fun, but I think she was a little confused as to why the water was cold! The temperature wasn’t cold to me, but compared to her warm bath…she was not very impressed at first.

We started out dipping her little toes into the water and she gave me a look like “Okay, Mom,that’s a little cold, but i’m cool with it” so, I sat her on the top step and she whined a little, then started splashing around and forgot about the water.

Once I picked her up and took her into the water she clung to me and yelled for a minute before she remembered she could still splash her hands and play in the water. After that, she forgot it wasn’t her warm bath and then decided she loved it!

Then, like a natural little swimmer, she started kicking her legs and smiling and laughing as we swam around with her.

I just bought a cute little “swimmer in training” baby pool float that I can’t wait to try! It has an octopus on the front and a sun shade that goes over the top. Adorable.

So, any free weekend, we will be at the pool this summer with our little fishy!
