{Katie’s Kitchen} Chicken Pesto

This is such an easy delicious dinner, you’ll be wondering why you never thought to make it before!

It’s a staple in our weekly dinner rotation because it’s so good and juicy. If you have a favorite brand of pesto use it! I normally get the pesto from Costco because I like the flavor the best.

This easy dish starts out with thin chicken breasts laid out in a glass baking dish. Then, you spread pesto on each chicken breast and put into the oven (I normally pre-heat the oven to 375 degrees, for 25 mins.)

Slice tomato and get your mozzarella or Parmesan cheese on stand-by. Once the timer goes off, take our the chicken, lay your tomato slices on top and then sprinkle cheese over the tomatoes…as little or much as you want. Put the dish back into the oven for 5 minutes to melt the cheese and you’re done!!

I normally make spaghetti pasta or bow ties to have on the side. I will toss the pasta with pesto and sprinkle parmesan cheese, too.

 

Ingredients

  1. 4-6 boneless skinless chicken breasts
  2. mozzarella cheese (about 1 cup)
  3. Tomato sliced thinkly
  4. Pesto (about 1 cup)
