{Katie’s Kitchen} Hawaiian Chicken Kabobs on the Grill

Get ready for summer and the holiday weekend by grilling!! Kabobs are perfect for a party and they’re quick to make.

I love pineapple when the weather gets warm and putting a juicy slice right next to a piece of chicken is THE BEST, when it soaks up that delicious flavor. Also,…grilled pineapple…YUM.

This recipe isn’t hard at all. Make sure you prep your skewers by soaking them in water for 10-20 minutes and start the grill!

First, I cut my chicken into 1 inch cubes…I used 1 pound of chicken (boneless, skinless chicken breasts) for 2-3 people.

Then, I used a teriyaki 30 minute marinade that I let the chicken sit in for over an hour in the refrigerator.

Before you take out the chicken, chop your veggies into cubes. I used a red and green bell pepper and a small red onion.

Now, you’re ready to stack your skewer! You pick the pattern but I definitely suggest putting the pineapple pieces next to the chicken. I put at least 4 pieces of chicken on each skewer.

Now you’re ready to grill! Cook and turn your skewers, depending on the grill, ours took about 15-20 minutes to cook.

Serve with a side of cilantro rice and you have a delicious colorful summer dinner.

Ingredients:

-Teriyaki marinade

-1 lb. of chicken (serves 2-3 people) cut into 1 in. cubes

-red bell pepper

-green bell pepper

-medium red onion

-fresh pineapple cut into 1in. pieces or slices
