Katie’s Kitchen! First Recipe…Broccoli Cheddar Soup

If you are a fan of broccoli cheddar soup then this is a great recipe for you!

My husand, Tim, has been asking for a crock pot full of his favorite soup, so I decided to kick off Katie’s Kitchen will a recipe to warm you up as the temps drop!

I will say it is a different consistency than the soup you may love from Panera, but you can easily change that by just not using the immersion blender as long as I did. Best to puree about 3/4 of the soup.

I did enjoy making this dish because it was sooo easy and quick, and I love throwing things into my crock pot and letting them sit, cook, and smell up my house!

Definitely also added a slice of Italian bread for dipping, which made it even more delicious! Tim loved it and can’t wait for me to make it again! Yay! SCORE!

Ingredients:

-Immersion Blender (will make life so much easier than transferring soup to puree)

-5 cups of broccoli chopped

-2 1/2 cups of low sodium chicken broth

-1 can of Evaporated Milk

-1 whole yellow onion chopped

-1 cup grated carrots (I did not add carrots)

-2 oz reduced fat cream cheese (NOT fat free)

-8oz block of Sharp Cheddar Cheese grated

-3 cloves minced garlic

-1 tsp. dired oregano

-1/2 tsp. kosher salt

-1/4 tsp. freshly grated nutmeg

-1/4 tsp. black pepper
