{Katie’s Kitchen} Bell Pepper ‘Egg in a Hole’

Have you ever had an “egg in a hole” in a piece of toast? So easy, right?! Well this Martha Stewart recipe is even more fun!

Add a colorful, sweet bell pepper to the mix and your Egg in a Hole just became even more delicious… in just ten minutes!!

In a large skillet, heat a tsp of olive oil over medium-high heat, add your bell peppers (cut into 4 1/2 in. thick rings), then crack one egg into the middle of each ring. Season with salt and pepper and gently flip after 2-3 minutes. Cook for one more minute so yolks are still “runny.”

Sprinkle with Parmesan cheese and serve on top of a piece of toast with your favorite breakfast side!

  • 4 large eggs
  • 2 tsp. olive oil
  • salt and pepper to taste
  • grated Parmesan cheese
  • 4 slices of toast
