{Katie’s Kitchen} Healthy Pumpkin Oatmeal Cookies

Finally! Something that’s pumpkin and healthy! A very simple and nutritious recipe that only takes 15 minutes from start to finish! This is a great breakfast treat or post-workout snack, too.

All you need is pumpkin puree, oats, 2 packets of Stevia (or more to taste), pumpkin pie spice, cinnamon and pure vanilla extract.

Pre-heat your oven to 350 degrees. Grab a mixing bowl and add 2.5 cups of oats along with all of your other ingredients. Go ahead and add chocolate chips, too, if you’re feeling like you want a little something extra!

Mix everything in the bowl to form a dough and add additional ingredients to taste. Scoop out the pumpkin oat mix and make about 10 cookies with your hands. Spray a baking sheet with non-stick cooking spray and place your cookies on the pan and then into the oven for 10 minutes.  That’s it!!

  • 2.5 cups oats
  • 1 cup organic pure pumpkin puree
  • 2 packets stevia or 10-15 stevia drops, or to taste
  • Optional Add-Ins:
    1/2 tsp pumpkin pie spice
    1/2 tsp cinnamon
    1/2 tsp pure vanilla extract
    1/2 cup of chocolate chips, coconut, walnuts, raisins or any other dried fruit or nuts
